I am so glad that I found your channel. I love to cook, but sadly, at 70 years old, I never really learned how to cook shellfish. My best friend and I go to the Outer Banks a couple of times a year and always bring back fish and shellfish. I have been cooking it but was never completely happy with it, and it's too good to play around with. I have a steamer very similar to yours on the way and can not wait to cook my shrimp and crab legs following your method. Now, I'll head back to your videos and see if you have a method for cooking scallops and tuna. Thank you.😊

When you clarify butter you remove milk solids and water, leaving only the butterfat - which has a higher smoke point ideal for cooking and sauteing.
