I've lived in Baltimore my whole life. Crabs are the best. We use Old Bay . J.O. is good but old bay is our favorite.

It’s neat hearing everybody’s methods. The Baltimore Sun had an interesting article from 2019, where they contacted 30 crab houses to ask what they use for seasoning. 18 used J.O. #2, 6 used Harbor Spice, 5 used a custom blend, and 1 used Old Bay in their own blend. Our family has always used beer to steam.

We cooked Rock Hall & Kent Narrows-caught crabs on a Coleman stove, in the biggest porcelain pot we could find - it would hold 2 dozen or more mediums. A stainless steel rack in the bottom held the crabs up outta the juice. I sprayed the crabs down in the basket with a gentle spray from a hose - washing em off. Kept wet burlap over them, and in the dark, to keep em cool and quiet. Dad would be upstairs in the kitchen mixing the boil in a 4-qt saucepan - vinegar, water, cayenne, paprika, celery seed, cardamom, other spices - just a touch of Old Bay - not too much - it was too salty. I'd load the pot, the focus being to keep the crabs quiet and calm, and get the best pack. When the pot was full - I'd put the lid on, and set it on the stove - waiting for the boil. Pop would bring it to the garage - we'd fire up the stove - get it roaring - place the pot on the flame, open the lid, and pour that steaming hot boil all over them, and put the lip back before they had a chance to jump out. A brick on the lid would do the trick. Stove on high - and about 35 mins to steam. None of that heavy powder all over their shells - they got a good enough coating of seasoning. We'd caught em that day, or the night before, on trot lines baited with salted eel - and it was rare when we couldn't raise at least a bushel. We bought em sometimes - usually when we were striper fishing, and not crabbing. They were $25/bushel back then (mid-'60s). Call the relatives and eat crabs and drink ice cold beer till past midnight - some of the best memories of my youth.

Absolutely correct about the black pepper. I like using salt and heavy black pepper. It really brings out the sweetness of the meat.

Its all a matter of taste and how you grew up.All the seasoning are good but you can overdo it also. The Captain used too much for me because I Iike to taste the Crab but thats again a matter of preference. We should just be glad that we have Crabs and Seasoning to put on them. As a barnegat bay (NJ shore) local born and raised, I prefer to clean the crabs before steaming, knife through abdomen, remove top shell and all guts / lungs (garbage disposal in sink is a necessity). Nice clean meat. I've come across some nasty crabs and don't want to steam all that junk into the meat. Steam in a pot with 1 bottle of beer 1 bottle of water, a few bay leaves and old bay. Season the crabs with a few splashes of beer and then old bay. You can also season the crabs with some fine chopped garlic + oil + parsley and skip out on the beer. A trick I use to prevent meat from sticking to claws is to shake the steam pot every few minutes with the lid covered. Steam for ~15-20 minutes and enjoy. I usually toss the shells back into the bay to avoid the mess and nasty cans. Im interested in trying that JO #2 I might go ahead and order some. Cheers from Jersey.

I live in Southern New Jersey, and brought some Wye River seasoning back with me. They have Old Bay here and think I've seen JO, but I'm probably one of the very few with Wye River, CAP! LOL

Grew up in Baltimore, transplanted to Florida. Whenever I fly in to visit relatives I carry an extra empty suitcase so I have something to put the 25# bag of JO seasoning in to bring back south.(and some packs of them Polack Johnies hot dogs)

I'm from Maryland mom first made seasoning then started using old bay then wye river. We would get crabs from A1 crab house back in the 70's and early 80's. They used a seasoning that was a black pepper seasoning that was good.

I appreciate your hard work and do realize how hard it is to keep a business going. I love crabs so much but I just can not bring myself to pay over 10 bucks a crab . The high prices have had a impact on how often I am able to enjoy and justify eating crabs. I guess people will pay it. Hard to justify it for me. One place had crabs in seven different sizes.... Keep up the great videos and reports. Love the drone footage.

Yes sadly prices are outrageous. I sell lighter crabs for cheaper so people can still enjoy them. Alot of people really like them.

@@FVMissPaula For picking crabs for crabmeat, I buy the heavy crabs. But I personally like lighter crabs because the claw meat comes out so easy and its extra flavored with the juice that comes out with it. Of course, the crab snobs look down on keeping any crabs that are not rock hard. They dont know what they are missing.

I enjoy watching your videos. I've learned a lot. I just wanted to comment on the vinegar. Many people question whether and why it is necessary. So I've done some research, and I've found that while the hard shells are firm, they are also very porous. When you add vinegar and beer to the steaming water, the flavors do enter the crabs through the steam and bring out the sweetness of the meat.

Capt CJ - I think the reason your crabs don’t drop their claws is because you already had them in a walk in cooler. So it’s almost the same effect as being on ice. Just an idea. When I steam mine straight outbid the basket on a warm day I have issues with lost claws. If I ice them in a cooler for even just a few minutes to make them semi hibernate like those in the video, very few lost claws. But I agree with you - who cares every bit of meat in that pot is going in my stomach one way or another!

Here in MD we do not use Old Bay !!!! Say it again for those in the back😉. Buy some crab seasoning from the crab stand, crab house, some grocery stores. Wherever you buy live crabs should sell it. Taste it and adjust to your taste. I usually add at least garlic powder, black pepper and mustard powder to mine(which interestingly I don't see mentioned often, where are the mustard powder people)?

Dry mustard is still used at some places. It adds a good flavor. JO makes a Black Crab seasoning and it has all that in it. Definitely a good one.

North Carolina and Florida my whole life catching and eating big Atlantic blue crabs and Florida stone crabs. Old Bay in Carolina and Everglades seasoning in Florida. Florida has the best seafood.

@@FVMissPaula alot of grocery stores have it they have like 7 or 8 different mixes and if you Google their name you will see that they offer wholesale prices to people who want 5 gallon buckets and larger orders. I've never tried nor heard of what you use but I have had Maryland crabs being I'm from Carolina and they are delicious.

$10 per crab is exactly why you should buy a few crab pots. I like to break the carapace off, crack the claws and cook them in boiling water with Louisiana Crab/Crawfish boil.(dry and liquid). Down South we like to throw in Lemons, oranges, garlic powder, artichokes, cauliflower, sausage, mushrooms, corn, potatoes etc.

Blue crabs are very short tempered. I used to annoy them by tapping at their heads really fast. And they would blow bubbles

I like to pull the backs off and then season them usually use old bay and salt and pepper and I also add some Apple vinegar to the water Definitely steamed not boiled 👍🏻 $120 a Dozen!!!???? I’m lucky to get $40 a dozen down here in Virginia for #1 7+ inches heavy 😩

I've never had luck pulling the top shells off. They are seasoned more but the meat doesn't stay as firm.

so I'm originally from Georgia via Pennsylvania then North Carolina, I learned to clean first so the seasoning can get in better. I've been told Maryland style is about seasoning your fingers through ripping apart the shell vs actually seasoning the crab, as the seasoning doesn't really get through when you cook them whole. Is this true? I might find out in a few minutes, as I cooked mine maryland style, poor man's crab seasoning recipe

I like to get a big pot, & put a small round plate upside down in the pot..fill pot up with water about half way up the small plate..warm water up add a spoon or so of butter to the water..put lid on pot..and just add whatever seasoning you want.. the crab won’t be directly in the water maybe an arm or two touching water..enjoy!! Don’t forget to prepare your garlic butter 🧈 for dipping!!👇🏻😁

I always clean them as well, takes an extra 20-30 minutes but well worth it. I have seen some very nasty crabs. Steam never boil.

I like to have a good rolling steam after lidding the pot for determining cook time. More crabs, more time.

Zaterans crab boil or pro boil a bushel of crabs, onions potatoes smoke sausage or andouilie sausage, mushrooms, corn cob, whole garlic celery lemons and 4 friends and a case of beer. Works the same for any shellfish. New Orleans baby lol. Down here we dont understand why y'all put the seasoning on the shell that doesn't soak up the flavor. Yours has good presentation though.

Someone else recommended Zatarains boil. You guys definitely cook up a feast. We are gonna try doing a boil and see how it comes out.

Why are crabs so high right now a 1/2 bushel use to cost me 75$ I just paid 95$ Maryland blue male crabs was definitely worth it in the end but the price is up there one crab was $4.25

White Vinegar. Apple cider probably be fine too. I use it mostly to keep down the foam.

Boiling is the way to go...IMO. Easy, quick and tasty. Last longer in the fridge too. Love your vids👍

I think alot of it comes down to what you're familiar with. Makes sense they'll last longer in the fridge.

How do you boil your crabs? Any tricks or tips? Seen a good KZbin video on it? I'm intrigued that there might be a way that is as good as steaming.

Old bay is the difference between just another crab somewhere and a MD crab or crabcake.

I would say what makes a MD crab is the seasoning. Most crab houses and carryouts do not use Old Bay. They use JO or something like it.

I've never had luck with cooking them without the top shell. They get more seasoned but the meat doesn't stay as firm.

Mathews County Va raised. Put your crabs on ice first...make em dormant, tear off their top shell and get rid of the dead mans gills before you steam em. Yeah bubba.

JO #2 has flake salt in it and a little different taste. Definitely worth trying.

Not sure. It's just the way its always been done. There usually sold by the doz or bushel and how full of meat they are. We squeeze every crab to make sure there full of meat.

I'm from the shore the highest I've seen is 80 a dozen for #1.. rite now it's 45 dozen #1 130 half bushel large same size you have. It's just more expensive in Kent County

@@FVMissPaula I grew up around tangier sounds but have been in Hawaii since 1990. I hope you guys are getting your fair share of the price. A cousin said they are 250 a bushel and he had trot lined 2 bushels in 5 hours for a family feast but he doesn't crab to sell them.
