Pour a thin but visible layer of water or lemon/lime juice over the guacamole to form a barrier with the air. Cover the dish with plastic wrap, pushing the wrap, so it is flush with the guacamole to prevent air pockets, or put the guacamole in a sealed tub. Put it in the fridge.

DO NOT use a super sharp knife to "hack into that seed" there's THOUSANDS of Emergency Room visits every year for Avocado Hand. Most People will miss the seed, this video is PROOF of that, notice the cut in the flesh after the knife takes a swipe, they cut the video because even they the "Pros" missed the seed at the first shot and the second shot at it they got it right, if you've never done this before there's a HUGE chance you'll use too much force and when you miss, you'll cut into to your Thumb's base and you'll be on your way to the Hospital and you can lose some of your ability to pick up and hold things. The video time is here 0:50 after you watch it a couple of times you can use . Period Key to advance the video one frame at a time and the , Comma Key to reverse one frame at a time. and you'll see where they edited out the "miss".

Hi, just a quick question. Once you are removing the water in order to eat the mash but you don’t want to eat the lot do you repeat the process on the remaining mashed avocado in bowl? Lemon juice and cold water or just cold water ? Or once you remove the water it has to be eaten? Thanks in advance

Yes, that is correct; if I can't finish it in one go, I just replace the cold water-no lemon juice, but just add water back on.

Sure, you can definitely use refrigerated lemon juice. A quarter to a half of a lemon should do the trick for one avocado, just like you'd use with a lime.

Do you mean like unripe avocado? It's probably best if you just let it ripen for a few days. If it is too hard to scoop, you can't really mash it either.

Hey, yes, you can store mashed avocado using lime as an alternative to lemon. Both fruits contain citric acid, which helps deter the browning caused by oxidation.

I did this. After 24 hours, it was a tan color in a few places. It was still edible and the brown went away when I mashed the avocado again after draining off the water. But I do not think this works past 24 hours.

Would it not turn brown if I didn't mash the avocado and just soaked it in water without the lemon juice? I use the avocado in my frozen graham cake and i'm afraid the lemon juice might ruin the avocado taste.

The Theory is good, however Avocados have a very short Flavor life, an unripe Avocado that was FORCED to ripen ( by placing it a Bag or next to Citrus) it won't have as much flavor and adding Lemon or Lime juice can eliminate the flavor of an Avocado so be careful ....that's why Guacamole was invented, an unripe Avocado tastes like Wood even if the flesh is soft, but it's still good for you, so add Onions, Garlic, Cilantro, Tomatoes...whatever and eat it anyway. I've had MANY Avocado trees, when they are Ripe and at the peak of flavor, they literally Fall off the Tree and they are still firm, but the flavor is OUTSTANDING and adding anything would kill that flavor.

I agree with you. The flavor of a perfectly ripe avocado really stands out on its own, and anything extra can sometimes take away from that. It is amazing how much difference the natural ripening process makes. Guacamole is a great way to make an underripe one taste better, but when they are at their peak, there is nothing like enjoying them as they are.
