As a Kenyan, I'm proud...that restaurant did a good job. The sukuma wiki is meant to be steamed and be a little hard, if it's cooked longer it will lose that nice green color and it will just taste overcooked. Also you are meant to eat the ugali with whatever meat you have using your hands....especially fish(we use our hands to pry it off the bones). Overall, I love your reaction and I'm glad you tried our cuisine 😊

I feel like you deserve to get proper Kenyan meals that don't conform to fine dining standards in the US cause you seem to enjoy eating the food so much, but the food isn't the best rep of Kenyan foods. Kept wishing there was more soup, and the ugali was on the plate with the meat and spinach. That said, due to interactions between the Kenyan coastal people (the Swahili) and Asians, and significant populations with Arab and Indian heritages, a portion of Kenyan foods have Asian influences like the pilau, if not outright the same recipes like the chapati and samosa. Thank you for trying out Kenyan cuisine. I hope you get a chance to try it out in Kenya, one day. Also, some foods like the ugali, chapati, and nyama choma(which means roasted meat) are better enjoyed when eaten with one's fingers.
