A suggestion for a future food theory episode: How accurate are food expiration dates? Has the food industry ever been guilty of shortening expiration dates in order to increase sales? ie. The shorter an expiration date, the less likely a consumer is going to be able to consume the entire product in the allotted time frame, thus requiring them to purchase another?

The major issue is identifying what has an expiration date and what has a sell by date. A lot of them have the latter...

I actually agree.. some products use manufacturing dates but never mention when it expires, also adding up to products that are sold in singles but the whole packaging where the single products came from doesnt have the expiry date Edit: I meant the packaging of food products that group together the individual insides of the product has an expiry date mentioned but the individual items inside of it don't have the expiry date

expiration dates put on food products are estimates based on tests on specific conditions, i used to work at a (water)ice cream factory and the average expiration date on the packaging (based on when the syrup for flavoring would go stale) , was about 4 days sooner. milk based ice creames were much exacter (about 30 hours before the milk would become sour)

I figured out with makes a really good burger is to take a regular piece of cheese folden the four corners to the center put it on the burger and then put a piece of that nice cheddar cheese sliced thin on top of that and now that she's will melt underneath of it and finish on the grill making a whole pocket of delicious melty cheese.

Wait but I’m confused. How do you add the cheese on top of the lettuce. Just raw straight of the fridge? Normally you melt the cheese on the meat patty once you flip it over once, but here you can’t unless you add the lettuce and then the cheese on top of the patty while it’s still cooking, which would be weird.

It’s funny because this was so common sense to me after working at Burger King when I was barely an adult. That was one thing that was stressed to us was that the build is very important and I was surprised at how important it ended up being after a little experimentation. IDK about other place, but McDonalds has a kitchen where they test things like this. Best way to stack, best way to assemble that stack (they build it upside down. everything goes on the top bun, then it's wrapped and flipped), test new sandwiches, how to grill it, how to bag it so it doesn't spill, etc. I imagine that a lot of fast food places just copy McDonalds.

One reason why the Google and Apple burgers tasted like less might be pallet fatigue: you’ve tasted so much and are starting to feel full, so you’re being rewarded less for tasting more in order to stop at some point. This is also a thing in tasting coffee or wine; that’s why wine or coffee tasters spit out the beverage (and also to not get drunk).

Interesting theory. I do think keeping the cheese a little bit away from the patty and bun is better though. The distance makes more contrast and in turn increases the flavor detected. The Apple hat's score is compromised, so that's a no go as well. I will only be using the Whopper, Krabby-Samsung, and my own control burger in my experiment(s).

At the end, where you were putting salmon with lemon slices in your traeger, I would suggest putting the lemons on the bottom to make it easier to pick up after cooking. Also, you can cure your salmon and smoke it at 150 for an hour to make more of a smoked salmon. I have a recipe I am more than happy to share :). Thanks for the entertainment all these years.

one thing to consider is the krabby was the only one with unmelted cheese, i personally find cheese has a stronger flavour before being melted so could see that effecting why you tasted the cheese so much more

Yeah, and the Google burger has the cheese drooping downwards, as if it wasn't melted atop the burger on the grill, then flipped, but simply placed below the burger, and melted a little by residual heat. And honestly, none of the pictures have cheese that look as melted as in these tests, so I think the way to go would be to have put it on unmelted.

Melt the cheese atop the hamburger no the grill, then flip it over when you put it on the bun and place another piece of cheese atop the hamburger, to melt a bit from residual heat. If you're not getting enough cheese flavor, maybe you just aren't using enough cheese.

What I'm getting from this is that the burger is SUPPOSED to break apart in your mouth, that's why the Krabby-Samsung with many loose parts tasted the best. The stable burgers made the burger stable even in your mouth... and what's on top and bottom that's contacting most of your tastebuds? The bread. The fact that they were taking BIG bites exacerbated this effect as the burger had less room to move around in the mouth.

I think it's pretty funny, that most people disagree that different orders of toppings changes the taste. I remember working at a restaurant, and making burgers all the time just so I could eat them right-side up, AND upside down. It most definitely makes a difference.

just want to say that for the ramsay burger, you should have followed his advice. i remember seeing the video you showed, and assuming i remember right, he toasted the bottom bun so that it wouldnt absorb the liquids as easily. therefore it could deserve a better structural integrity score than you gave it.

I am actually very intrigued by this since I am currently working at a McDonald's, and we stack our burgers from crown (top bun) to heel (bottom bun). The order goes, for a hamburger, crown, ketchup, mustard, pickles, patty, heel. The cheeseburger is the same but between pickles and patty is a slice of cheese. McDouble goes crown, ketchup, mustard, pickle, patty, cheese, patty, heel; double cheeseburger has a second slice of cheese between the pickle and patty; filet goes crown, tartar sauce, fish, a half slice of cheese, heel; McChicken is crown, mayonnaise, lettuce, chicken, heel; crispy goes crown, butter, pickles, crispy chicken, heel; deluxe crispy is crown, mayo, lettuce, tomato, crispy chicken, heel. The Big Mac is a very different preparation order. We set the crown upside down in the top of the box, the heel rightside up in the bottom of the box, and set the club (the middle bun) atop the crown. Then we put the Big Mac sauce on both the heel and the club, then we do the same with lettuce, placing it on both the heel and the club, atop the mac sauce. On the heel, we then add the slice of cheese, while on the club we add pickles, then we add the patty. Now comes the slightly awkward part, most of the burgers and sandwiches can just have the untouched bun flipped onto the rest of the sandwich, but that isn't what ahppens with the Big Mac. Instead, at this point, the club section is lifted and placed onto the heel, again, without being flipped, then the crown is flipped on top of the whole thing. I'm sure anyone who even loosely studies the stack order of a Big Mac already knows this in some capacity, and it's probably addressed in this video. Premature comment out of the way, now to watch. Premature comment edit time! I like to add crinkle cut pickles (the ones you find on a regular and the spicy McCrispy, not the ones used on burgers) to my Deluxe McCrispy. I also add ketchup onto the heel, which I dare not tell my boss, who thinks that combining chicken and ketchup is sacrilege and heresy. My ideal sandwich is artisan potato crown, mayonnaise, lettuce, crinkle cut pickles, roma tomatoes, a crispy chicken patty, ketchup, then artisan potato heel. We shall see if my preferences or my work instruction match up with the conclusion. Watching the taste test segment explains something about my enjoyment of the Deluxe McCrispy despite not liking the flavor of tomatoes. The tomato is masked by the chicken along with the ketchup that I add.

I imagine the structure problems could be partially resolved with a less precarious shape. Their patties looked thick with a smaller diameter and the onions were cut really thick, too. A shorter, wider sandwich would probably be more optimized in my opinion.

Completely agree. I've personally taken to adding more, thinner slices of onions in my burgers, and I cut the ring in half as well, to avoid getting a huge slice in one bite that just overpowers everything.

A super easy way to test out the difference staking order makes at home/at the burger joint (if you don't want to cook/order mutliple burgers) is to just take a bite of your favourite burger, then turn it upside down take another a bite. The difference is probably going to be really noticable.

Pro tip - if you're constructing a burger anticipating a high degree of stability issues, you need to lightly toast your bun. Just enough to create a crust for structural integrity. This is a critical step in the Ramsay burger, for example. Food for thought. ...Bonus tip - "Food for thought" should be a catchphrase on this channel.

Stumbled across this video after a few years and I'm realizing there's one thing that we did differently in my family - we put our burgers down upside-down when we're not eating them. That ensures that the thinner bottom bun doesn't get soggy, so putting the lettuce and tomato under the patty makes more sense in that specific context.

Ramsay also used less condiment so it wasn't soggy and slippery. He didn't need lots since he had it on both the top and bottom. Which is close to what I would do which is grill the bun, put on Sriracha sauce and brown mustard on then prior to putting anything else on put the but together and twist them back and forth to work it into both the top and bottom of the bun.

I didn’t even know that wood pellet grills were a thing. I’m assuming they run on the same kind of pellets as a pellet furnace? If so, that’s genius: they found a way to sell people wood pellets in the off-season.

Depends on what kind of pellets you're selling, most of the time pellet grills are used for smoking meat so hickory, and fruit woods are popular. I'm not sure what pellet furnaces use since I've never used one.

@@grtech2011 I wasn’t necessarily suggesting that the furnaces and the grills were fueled by the exact same pellets. I was thinking more in terms of the manufacturing process. These companies are probably using the same machines and/or the same materials to make both kinds of pellets.The grill pellets might have flavor infused into them that the furnace ones don’t, but I can’t imagine that the manufacturing process is much (if any) different.

I mean…. I do believe Traeger grills invented the pellet grill, though as for the pellets they do have to be food grade and can’t just be normal wood pellets as it’ll throw off the flavor.

By “kind of pellets”, I didn’t mean that people were really throwing the exact same pellets into both. Perhaps the word I should have used was “type”. You don’t need to throw hickory into a furnace and pine would make your food taste like crap, but the machine that makes both is probably the same or at least very similar.

Their workers are encouraged to be as fast as possible, and since they're still humans (for now), they often don't care about making the food look like it does in the ads, since they can't make them perfectly while also speedrunning putting food together. Also, ads lie to you constantly anyway. Burguers are not only perfectly constructed, but then they use photoshop and pimped out lighting to make the burguer look as perfect as it can, that's all.

@Mr.Springtrap tchnically, it is a hamburger, and adding cheese, turns it into a cheeseburger, that's why we don't differentiate them in england.

That's the way my brother likes his burgers. I'm 100% serious, he's *that* picky with food. For me, i don't like burgers at all. Not because I'm picky, but because eating one is just so incredibly awkward, way too tall.
