(Top tip for anyone who wants to make them: keep an eye on their colour from eight minutes into the bake. They can go from perfect to burned in less than 30 seconds.)

This was posted the day after my 48th birthday and I consider it to be the perfect gift! In the last few months my upstairs neighbor has collectively given me about 10 pounds of almonds that he no longer wanted. I tried to find out what he found distasteful about them when they came from Trader Joe's and Whole Foods etc. as they taste Just as they're supposed to. I never did find out and have been burdened with trying to find something to do with the dang things before I forget about them all together and their oils turn. This Is PERFECT!!! These are an absolute top favorite and usually make mine with oatmeal because I can't ever afford the high cost of almonds. I have so many now that I'm going to try both honey And corn syrup AND try a half and half for a more delicate flavor. Your description of the honey triggered the thought of possibly adding a 3rd batch using half molasses using the same neighbor's contribution... I need to spend a little more time on the science behind that one before sacrificing beautiful butter and nuts to a possible inedible failure. Thank you for the Birthday Gift, Chef John!

I made them the minute I saw the video. Mine Spread it all around the pan creating one uniformed Continent. I had to use a cookie cutter while hot to segregate and then push the cookie cutter again to split the caramelized Florentine. I think I pulsed the almond to fine. Even more I use Velroh duch process Cocoa to make the chocolate spread because I didn’t have 75% chocolate bar. the ganache became a sauce that it did not harden at all. The taste is beyond incredible. I swiped them clean again as used a chocolate melted bar. I’m crossing fingers. Without the chocolate, the more it burns and darkens, the beater the taste. The honey ... spot on.

Made these today, first time, forgot to eat dinner I got so busy. WATCH THEM, don't go by baking temp. I had to do 8 minutes instead of the 10-12, size similar, am at high elevation. First baking i've done in years and it came out DELICIOUS (after 2nd batch) worth the time every so often, and a great party cookie

Made them this morning...they spread like crazy! 8 on a silpat was 4 too many, so I'm baking 4 at a time. Very thin, lacy and delicious! But my first batch looked like the Blob! All melted together.

I used 1 tea spoon and still too big . Will make with less. They turned out delicious. They bake really fast and have to be in the middle of the oven or they burn :(

Yep. Dansukker is the standard brand here in Sweden, but I'm sure any golden syrup will be lovely. It's a generally pretty awesome ingredient in cookies tbh.

Another Holiday classic! Growing up, there was a lunch counter that sold freshly made cookies like these, called pogens. It was said to be an exotic European cookie but all over the world butter and sugar tastes good in a cookie! As for other holiday recipes, we are getting ready to bake anchovy and onion pizza!

Florentine Biscuits in Australia are a lot different. They have cornflakes, mixed peel, sultanas, glaze cherries and are dipped in chocolate

i LOVE these things! i used to buy them at a local grocery store, but they quit making them :( they used to drizzle dark chocolate on the top, and they also made them with slivered almonds instead of chopped. either way looks good to me. i haven't made any type of cookies in probably 30 years at least, but i'm for sure going to try to make these.

Look lovely and a lot more delicate that the ones we tend to do here in the UK. Ours tend to be slightly thicker and will often have some buigger chunks or whole nuts in there along with some dried fruit like raisins, pieces of glacé cherries, candied ginger & peel & if we're really good glacé angelica. This tends to make them slighlty chewier, though I like the "snap" of yours.
