In some parts of the Middle East, aka kebab land, they use pomegranate molasses for marinating the meat. Kabab-e-torsh, a northern Iranian specialty, is an example of that. Pomegranate molasses taste very much like balsamic vinegar. So, I am sure this tastes amazing.

I just made this. I used barrel aged pomegranate balsamic vinegar from Texas Hill Country Olive Co. and omitted the honey. Didn't want it to be too sweet. Also used Sicilian infused olive oil for a little extra flavor and fresh rosemary out of the garden. Turned out amazing. Served it on some yellow rice with some fresh green onions. Thank you Chef John for all the years of incredible recipes and humor. I look forward to enjoying even more videos

I made this for the fam the other night, this was perhaps the best beef marinade I've ever tasted. Everyone cleaned their plates which is rare for my beef averse girls. I did use the overnight marinade method but couldn't find aged balsamic simply because they didn't have any at my supermarket so I just used plain old organic balsamic.

When grilling, charcoal is the best. The taste and texture it provides to the grilled meat or vegetable, is second to none. Wow, the finished dish, looks amazing.

I made this tonight for the wife and I (cause the kids wont eat anything good) It was wonderful. I didn't have rosemary so I added fresh Thyme and I added fresh ginger since I had some I needed to get rid of. I also grilled some big chunks of red onions, green and red peppers with some Cajun seasoning. A complete keeper... Lovely.

Sirloin is a great choice for this. It's a bit leaner than other steak cuts so it is less likely to cause flareups. Thanks for the great idea.

I almost always use sirloin for any sort of kebabs. Marinate for sure, so it isn't too dry without much marbling!

When I was in the service down in Ft Knox a Hawaiian lady would make this for our beef or steak strips so delicious can’t wait to try it today. It’s been since the early 90s since I had this delicious meal.

My family is from Dagestan(North Caucus, part of Russia), and this marenade for scewerd meat is almost the exact eay my father makes the traditional Shashlik. White onion are the more common choice, and he usually adds cilantro/parsley(which I hate). And the traditional serving is as a pile of scewered meat with a bunch of chopped onion and greens on top. Anyway, while you won't find this in Italian grills, you are very likely to find it in Caucasian/Georgian grills.

Shashlik is popular in a lot of post Soviet countries, kinda the answer to western worlds barbecue. We used to make our with white vinegar, lemons, black pepper and of course salt. Most often we would use pork though which I suppose is not very popular in Dagestan.

​@@rihardsrozans6920makes sense, i definitely seen similar dishes from Uzbeks and other former ussr countries, especially the southern republics. Pork meat is definitely less common, but still surprisingly common for Jews who came from a muslim republic, just not in this form. I definitely need to give that a try

This seems remarkably similar in recipe and preparation to Pork Agrodulce, which is cubes of pork shoulder (or similar cuts) soaked, and then braised for several hours in the marinade, making a sauce. Fresh garlic mashed potatoes are wonderful with this! (Which I believe was also Chef John's suggestion!) I'm sitting here, realizing my mouth is now watering. I love this stuff!!!

I'm so Sorry... what the H E Double Hockey sticks is a terrace for if not living outside and enjoying a BBQ. Do you have an HOA... they need to be outlawed. If you really what to enjoy a BBQ flavor... try some Liquid Smoke and Cook in an Electric Skillet... It Ain't Perfect .. but it's better than Nothing.. Good Luck. ND HAPPY MEMORIAL DAY.

I use balsamic vinegar to cook thin slices of beef (like those used for sandwiches) with bell peppers in a pan. Quick and easy.

Ive been making the same thing with portabella mushrooms for a long time. I just dont marinate them. Basting them with the balsamic marinade while they are grilling i feel gets them perfect. It always turns out good.

I was just thinking a good thick, hearty slab of mushroom would work well this way! Or, just alternate the sirloin chunks with your favorite mushroom a la kebabs!

I made a horrible miscalculation my second time making this recipe and didn’t have balsamic vinegar OR Worcestershire sauce. I subbed in a balsamic glaze (reduced vinegar with a little sugar) and A1 steak sauce. I think the substitutions made these slightly better than the original.

i have a technical question. I want to vacuum marinade the meat, then sous vide and sear it for a finish. ...will it work?

You should definitely try it, but you might want to shorten the marination time a little. If the vinegar gets too deep into the meat, I can imagine it tightening up the proteins a little and making it slightly drier or slightly tougher. Still, that's going to be a balancing act, because it's also going to make it flavorful, so give it a try. As Chef John might say, "That's just you cookin'."
