I grew up with Cowboy Cookies, which were cookies with basically all the cookie fixin’s in them- walnuts, peanuts, macadamia nuts, chocolate chips, white chocolate chips, coconut, m&ms, raisins, dried cranberries, etc. I’ve always presumed the cowboy in recipe names were just another way of saying stone soup, everything but the kitchen sink, whatever’s in the fridge, etc. I think I like your explanation better.

A good way to soften the cream cheese if you forgot to leave it out to become room temperature is to take it out of the package & put it in a microwaveable safe bowl then microwave it for like 10 seconds & then mix it. If it’s still too hard after that, add a couple more seconds but don’t over do it cause it can melt (quickly) if you’re not careful 😊

WE JUST MADE THIS And OMG We did use chicken tenders instead of sausage. Just did garlic, onion powder, chili powder, cayenne and some red pepper flakes. S&P. Baked those. Then for the cream cheese- Due to the cream cheese shortage I was only able to get 1 block of regular and 1 container of the jalapeño cream cheese. SO good. The rest we did the same. My 3 jalapeños were pretty mild. So much flavor in this we absolutely love it!!! Thanks Chef!!! 😍

I would just add this comment, that I would recommend using yellow cheddar cheese for this dish. The flavor will be the same, but the white cheese ends up making a funky, unappetizing pink dip the color of raw chicken. Yellow cheese makes the whole thing look more like a queso dip which people invariably can't wait to eat.

I've made almost the same dip but with leftover brisket I had made an pico de gallo mixed in. Yum

I didn't know this even had a real name. It's always been "The Dip" in my house, except we layer it and bake instead of mixing it together. Half the time we change out the sausage for cooked taco seasoned chicken.

Chef John, do you have any suggestions for vegetarian versions of this dish please?🙏

Soy chorizo would probably be an acceptable substitute for the sausage

I make the rotel and velveeta version, just leave out the meat. It’s good. 😊

@@cmoore6131 put them in a warm pan, the merest suggestion of olive oil, crush them a bit as you stir, add cumin and a sniff of white pepper

The 'rotel dip' I used to have seems more like a cross between the traditional and this. After the mention of Cowboy Caviar, I couldn't help but think this could use some black beans and red onion mixed in and some fresh sliced avocado on top. This might be a great recipe for when a superb owl comes to visit.

I wonder if chorizo would work as well in place of the Italian sausage?

i'm not in US so super bowl isn't a big a thing here (UK), but agree and i'm in similar situation. a great many of chef johns recipes are "just the right recipe, at the time" but all the time. .. lot's of good food, and not enough belly :'(
