Thank you for your support on my initial crispy pork belly recipe video. We are now over 2,000,000 views - kzbin.info/www/bejne/nobIpXd5hJ12eaM More about the meat tenderiser/poker I used: bit.ly/LADBGood Recipe: Ingredients: 800g pork belly 2 tsp Garlic powder 4 tsp Onion powder 1 tsp White vinegar 1/2 - 1 tbsp Salt (adjust to taste) Vegetable oil Directions: 1. Place pork belly, skin side down, fully immersed in boiling water. Let it simmer for 15 minutes on low heat. 2. Take pork belly out and place on a flat surface. Pat dry with paper towel. 3. Put skin side down. Slit the meat around 1-2cm deep to preferred bite size thickness. Pat dry excess moisture with paper towel. 4. Mix onion and garlic powder. Rub the mixture over the meat side of the pork belly, including the sides. 5. Place meat side down on 2 large sheets of aluminium foil. Pat dry excess moisture on the skin with paper towel. 6. Fold the aluminium foil to cover the sides of the meat, leaving the skin exposed. 7. Rub the skin side with vinegar, leave for 30 seconds or so to dry. 8. Rub the skin side with salt. 9. Poke/perforate the skin side with a tenderiser/poker/fork (The one I use: bit.ly/LADBGood). Pat dry excess moisture with paper towel. 10. Refrigerate for 8 hours or overnight. 11. Remove from fridge. Lightly brush skin with oil. 12. Air fry at 200C/390F for 30 minutes. 13. Remove basket and place on flat surface. Poke/perforate skin a bit more to make it crispier. 14. Air fry for further 20-25 minutes at 200C/390F. 15. Remove from aluminium foil and place on chopping board. Leave to cool a bit. 16. Chop to bite size pieces. Serve with your preferred sauce.

Just a little tip. You can dry the pork in the fridge or use a hair dryer on a cool setting. I have done it both ways and it comes out perfect both ways.

Thank you and I like to ask if there is a reason not to cut through the skin when the meat is raw and only did it after it is done?

The fat could release too much oil that could uneven the crispness of the crackle

Hi Lazy Awesome Dad - in your initial video you didn't not boil the meat first and it took 1 cup of salt vs. no boiling and only 1 tsp of salt. And no poking was required. What difference does it make? I used your first method many times and it is awesome. (Other videos always boil etc.) Help? Thanks
@LazyAwesomeDad3 жыл бұрын
I have been using this new method as I do prepare it the night before. After work (when I do have some) it is just easier to just pop it in the Airfryer and let it does it’s magic. If I am in a rush, I use the first method. Both give a great result. I find the crackling is more even with the second method. You can amend the spices to your likings .... I usually vary between onion/garlic powders or 5 spice mix. Hope this help.

Oh yummy. Can I ask 2 questions please. The use of foil, is it just to catch excess grease or does it serve a different purpose? And what brand is the perforator please? Thanks
@LazyAwesomeDad3 жыл бұрын
The foil is used to catch the oil and prevent the meat from overcooking. Hope this help. I got the perforator from here: bit.ly/LADBGood

Too bad it doesn't render more of the fat in the center out. I slice Sow Belly like thick bacon strips and air fry them until the fat is rendered out, the Skin also puffs out a lot. They are very dry and crunchy, but I like it that way. A bit of BBQ or Teriyaki sauce for dipping...

Overcooked, point blank. Shudnt be all black like that. Majority of other vids says at 400F for 30-35min total. Not 50-55min. Way too much. Other thing is you don't need the tin foil. Sure it's used to hold the oil but what it also does is fry the meat side making the meat hard and tough. Just let the oil drain naturally into the pan. That way it wont fry the bottom side of meat.
