Same. My mom's version of Caldereta is the best. we call it "Wasabi" or "Wasabe" (Walang masabe) since you cannot say anything bad about it. I have a clue on the hidden ingredient but never got it exactly. It tastes like a spicy Kare Kare with thicker sauce than Caldereta.

If you want it super spicy use a spicy green long chili and use the Labuyo chili for the red one, your dish will be fire but delicious, great cooking Kabayan. You should cook them Bulalo or Kaldereta.

hey chuckier! Bicolano here! Just a suggestion, if kulang yung gata mo, tama naman na dagdagan sya ng tubig. Pero have you tried na tubig muna before ilagay yung gata? What we normally do is, ilalagay namin yung tubig to cook the meat further then ilalagay yung gata. We see to it na naluluto kasi yung gata to prevent early spoilage din. Cheers! Actually idol natutunan ko sa Daddy kong bikolano na kung bakit tinawag syang bikol express ay inihalintulad sya sa kalsada. Merong maliit na kalye (eskinita), normal na kalye, medyo malaki ( highway) at mas malaki (express way). Kaya daw tinawag na bikol express dahil hindi po sya maanghang lang, kundi super duper anghang. At hindi po talaga makakakain ang majority kundi ang mga tirador lang sa anghang ang makakakain. Dahil lahat po ng pagkain pwedeng lagyan ng sili pero di sya matatawag po na bikol express kung hindi sya super anghang... Mako-consider po syang super spicy kung at least hindi hihigit sa 40% ng tao na kakain ang makatitiis kumain neto... Yan po ang natutunan ko sa erpat ko pong matakaw sa bikol express... Yun pong niluto nyo sigurado po ako 1/4 kilo yung siling green nya at yung labuyong hiniwa nyo mga 25 pcs po. Kaya namimiss ko po yung luto nya kung buhay pa sana sya. Kase po yung mga bikol express po ng mga karenderia ay hindi po maanghang... Kutob ko po kung father ko nagluto di po lahat sila makakakain... ☺️ More power idol, keep cooking Filipino dish. Originally niluluto yan ng lolo ko sa bao ng niyog pero hindi pork ang sahog kundi dried fish at alamang...sandamokal na sili ang halo..kaya sa bao ng niyog niluluto dahil sa sobrang anghang kahit hugasan mo na ang kawaling pinaglutuan maanghang pa rin sya kapag nagluto ka..tinawag na bicol express dahil sa anghang mapapa sipol ka ng mabilis or bicol express sipol.. Making Bicol Express really spicy is to make the chilis (long greens and labuyo) as the main ingredient and not the pork. We also use Alamang instead of Bagoong (I guess, you might not have it abroad?). Then pair it with piping hot rice. With so much heat, it becomes like a side dish because one cannot finish it easily. Be ready with tissues, your nose will become runny 😢😂

in some provinces same lang ang bagoong / alamang or in short shrimp paste. . bagoong in some prov called ginamos or the fermented fish anchovies .

I stand corrected, some parts in Bicol add fresh alamang. We know Bagoong as prepared already, in some areas like a paste.

Yeah.. coz in Manila, we cook Bicol Express with pork as a main ingredient on it, but when my father brought me to their province in Naga City, where bicol express is really spicy and their main ingredient there is the green and red chillies and the pork is like sahog only and even the children there can eat 9/10 spice levels

Bicolano here :) Thanks Chuck for introducing Bicol Express to your team. To lessen "hotness", some remove the pith and seeds of sili, then wash them with water. There's another version of it, remove or minimize coconut milk.

siguradong masarap yan pero kung gusto nyo sir, na talagang maanghang, ilagay ang sili panghuli yung malapit na maluto. yan ang ginagawa naming bikolano. nawawala kasi ang ang anghang pag matagal na niluluto ang sili.
