I was born in the US. My parents came from the Philippines so I grew up eating these breakfasts. Especially longanisa. When my dad said he cooked vigan longanisa one morning I was like “how did you make longanisa vegan?” He goes “its vigan! It’s vigan!” I try it and I was like “there’s no way this is vegan it tastes like real meat” and goes “no, it’s from vigan Philippines” lolol

I like the tapa prepared by Rodic's Diner. They put it in a blender to shred the meat and remove the chewiness and toughness. It's very easy to swallow along with the Garlic Fried Rice and a runny half-cooked fried egg.

Tinapa skin can be eaten. That’s where the flavor is. That tinapa is not galunggong so just be careful wd the scales in the middle of the fish but you can eat its skin. I hope they have time to try pakbet, Kare kare adobo Bangus belly, choc meat, etc Heard they’re leaving soon.

Beef tapa and tocino are not dried. They are cured and/or marinated depending if they are home made or mass produced. However, there are dried meat being sold in some parts of rural Luzon like Bulacan, Nueva Ecija, Pampanga, etc. These are mostly wild game meat such as deer or wild boar. Reason why they are salted and dried is to make them last longer without spoiling since it takes a while to bring down the meat from the mountains to the town or cities.

@@foodiemommaph I live in Bulacan now for the past 10 years. Experienced hunting wild boar. That tapa you are talking about could have been prepared traditionally meaning prepared salted and air dried because of the absence of refrigeration. The same way we prepare the wild boar so it will last longer. The tapas now are usually marinated. They don't air dry them because the drier it gets the tougher the meat becomes. Plus marinating adds more flavor and also softens the meat. Similar to the one you ate.

Jim Morrison, I must say that growing up in Bacolod City in the '70s, where we had a fridge, we would dry the beef tapa to give it the dried, tough texture that tapa is known for. Then, tapa had to be chewed well when eaten. It must be the last 20 or so years when people no longer hung dry the meat to keep the juices and softness.

In Canada we smoke Salmon. Chum is generally smoked as they are not a very tasty species when cooked in any other style. Sockeye & Chinook apparently are the best as they are tasty fish smoked or B B Que. In comparison, I still like the Smoke Mackerel(personal preference) prepared Philippines style. It's a fun to watch video clip, Thanks.

I love this channel...the tapas and tocinos are not from dried pork and beef... .the goya? a manufacturers name of the chocolate..choc nut...the tinapa, you can actually eat the skin if u want too..

Silog is a expensive breakfast here in the philippines. Some locals eat pansit, lugaw,.. Some have "TUSILOG" your not a Filipino if you don't know what is TUSILOG and Black Coffee on the side hahaha.. Masarap kumain ng naka KAMAY!!!
