You can add 18g to the AP flour or cornstarch instead

Do you mean vegan? Most vegetarians can still eat eggs and dairy, just not meat. In any case, you can use aquafaba (the liquid inside cans of chickpeas) instead of the egg whites. Google the exact quantity, but it’s about 1/4 cup per egg white if I remember correctly.
