The original form of Inaniwa dried udon was introduced to Inaniwa, and the technique was inherited by Kichizaemon Inaniwa (Sato), the head of this family, who continued to research and improve it.
The dried udon technique, which was used by the Marquis Satake, feudal lord of Akita, was passed down from one generation to the next in the Kichizaemon family and has never left the family. However, Kichizaemon was concerned that the technique would be passed down from parent to child and from child to grandchild, so it was specially handed down to the second generation, Yosuke Sato, who founded the family.
This was in 1860, at the end of the Edo period.

ロサンゼルス在住30年以上ですが、香川県や大阪府の貧乏人が「なんで秋田の稲庭饂飩が¥1200もするんだよ、俺の地元では¥300だぞ」とか言ってきても相手にしないで下さい 分かる人には分かります。 国産で良いものを提供しようと思ったらそれなりのお値段します ロサンゼルスで政財界の方に超有名な日本食割烹料理屋でマネージャーをしてた経験から言えます 日本に帰ったら是非、銀座のお店に行って腹一杯食べたいと思っています

稲庭うどんは、江戸時代に殿様の「時間も金もかかっていいから美味いうどんを作れ」から始まったものが 明治になって製法が民間に広まったという、元は宮廷料理だったフランス料理と似たような経緯があります 大阪や埼玉や香川の「米が獲れないから代わりに食べた」といううどんとはスタートからして違います
