This is a master class in noodle soup. The owner has thought about and understands every aspect of soba- and soup-making to a degree that I haven't seen expressed in any other of the many noodle-soup-restaurant videos that I've watched. It's impressive that he shares it all so fluently and so openly. It's as if at this level of craft competition is not feared. Also, the kitchen team appears to operate like an elite squad.
It is good to put something underneath the stove to prevent fom getting dirty, however I never agree to use newspapers for this purpose as it will easily catch fire they can use aluminum foil instead it will last and safe.
