I love mincemeat tarts, my grandmother only made them at Christmas, and I waited with anticipation! Mr Paul, I have only recently discovered your brilliant website, so last weekend I made these really good mince pies. I stuck to your recipe and used butter and lard for my pastry. For my filling I used Waitrose Amaretto mincemeat that made them quite rich but a real treat. A great recipe, thank you. Well they turned out well

I have only just stumbled upon this brilliant recipe for the fancy mince pies, as I call them. Very thoroughly explained and these are getting made stat! I usually have my mince meat made in january or february. That way, we're good to fo as soon as Christmas comes our way. Loved this. I made mince pies using the shortcrust pastry from this recipe and was amazed how easy it was and they even tasted great. I can't believe I achieved this. Thank you so much Mr. Paul. Will be trying the egg custard tarts next weekend.

Yes I do Jane. This is my favourite Glaze: 150g your favourite marmalade 100g light brown soft sugar 2 limes , juiced 2cm piece of ginger , peeled and grated to a purée 2 star anise , plus extra to use on the joint Once your ham is cooked, allow it to cool and remove the skin, then Heat the marmalade, sugar, lime juice, ginger and 2 star anise in a saucepan until the sugar and marmalade have melted. Leave to cool a little so the glaze thickens. Spread the glaze over the ham, then push star anise into some of the diamonds and bake for 40 mins until glossy and caramelised in patches. Baste the ham, spooning the glaze over it, a couple of times during the cooking time. Leave to cool slightly before slicing and serving.

Hi Sandra, my late wife and I had a house in Morocco for many years (holiday home) and we purchase a flat in Spain where we used it to break the journey from the UK to Africa. We fell in love with the Spanish lifestyle and sold up in the UK and moved here 25 years ago and opened a bakery here. I retired from that 11 years ago, sadly lost my dear wise Pamela in 2017.

Hi Mr Paul sorry you have lost your life I should imagine a big hole in your life. We went on holiday to Morocco but It wasn’t for me. It must have been lovely having your bakery hot inside as well as outside. My uncle was a master baker and made fabulous cakes all our wedding and birthday cake he just had a a little paper bag todo the fancy icing on the cakes ie shells and roses and crinoline ladies . At least you keep busy with your videos and of course showing us all your lovely cake recipes. Keep safe and take care. Sandra

Ji Geoff, Yes, they do freeze very well. The secret to freezing anything is to keep the air around the items to an absolute minimum, If you're going to store in plastic boxes, b est to wrap each tart in cling film (no air inside) then freeze. When you're ready to eat them, place on a tray well spaced,DO NOT remove the cling film, let them thaw at room temperature, you can of course them pop them in a hot oven for a few minutes if you wish. If you use my method of freezing/thawing ant condensation will form on the outside of the cling film and not on the pastry, this will keep the pastry nice and crisp. Hope this help.

Hi Mr. Paul, just like the other commenter I am the only one in the family that enjoys mincemeat. This may be a stupid question but since I'm not a baker so I need your direction. Can I freeze them b4 baking and then just remove the amount I need, defrost them and then bake or should I bake all of them then freeze?

Hi Susan, in the bakery we never did freeze these, however Frangipane is better baked first, then frozen. The secret to freezing anything with pastry, is to keep as much air from the package as possible. I recommend wrapping each tart individually in cling film, then store in an airtight box, When you want to eat them, take out the number you require and leave on the worktop. (DO NOT UNWRAP) when thawed pop into a hot oven for about 5 - 6 minutes to freshen them up. I hope this helps.

No sorry, I spend a lot of my time (time which I don't have much of at the age of 80) making these videos which you get for free. The items I don't cut into are usually items I can't eat due to diabetes, so I give them to a local care home and I wouldn't feel happy giving them something I had cut into.
