Hi Steve, do you ever use bakers fondant in place of sugar ? if so what percentage would yo use in place of sugar? Thanks Debbie
@crazybaker12 жыл бұрын
I only use baker's fondant for icing topping, or filling, I would not recommend it for any other reason, out of interest are you talking about icing sugar for this recipe, if so it's the same as caster sugar weight wise 😀
@debbiebinder40472 жыл бұрын
@crazybaker1 No, the bakery where I worked years ago used bako fondant in place of sugar for sweet paste. ( Mince pie, custard tart cases) but I can not remember the percentage they used. 🤔
@crazybaker12 жыл бұрын
@debbiebinder4047 to be honest I am not sure why they were doing that, caster sugar is half the price of fondant, In fact it would most likely make the pastry like a dough and not a light pastry 😀 I like to hear what odd thing go on, because sometimes they could work out better 😉 😀 😜

@crazybaker1 I don't think the supervisor was supposed to do it, but he did 😂😂.

What flour please? And salted or unsalted butter? Many thanks
@crazybaker1 Жыл бұрын
Recipe is attached in the description, butter can be both types, I found that powdered sugar is much better for flour best is cheap bread flour or plan flour 😀 enjoy laters Steve

Can lard be used in lieu of shortening?
@crazybaker13 жыл бұрын
Yes it's a great option if you don't have white shorting 😀

Hi steve im making at work the deep custard tart mince pies with the vienese topping, Did you make you're own mincemeat? or buy already to use? I would of made the shallow tarts like yours but owner wants the deep ones. Of course the supermarkets sell them so cheap we have to make ours better as craft bakers.

For the video I used my mincemeat kzbin.info/www/bejne/omrchmpsfayXptk and just added in some extra brandy, at work in the bakery, I would just use bought in mature mincemeat best one 😋 laters
