I asked my wife about this and she said when hair turns gray it looses it's pigment cells that make melanin. This also makes hair very difficult to color with conventional dyes.

in my experience those who dislike the new seasons are a loud minority of people who think it got "too political" as if the show wasn't always political and isn't just adapting to changing social situations. it's gone on for a long time. times change and great shows adapt to those changing times. sunny is definitely an example of that.
