A few years ago I did a KZbin search on BBQ Beef Brisket and found Franklin's channel and watched his whole story of how he go into BBQ, because his first brisket he ever cooked was very chewy and he tossed it out. Also at that time I subscribed to T-Roy's channel just to learn a little more about smokers and cookers. Now, here you two fine fellas are reviewing Franklin's restaurant. Just watching this now in Nov 2020. I was down in Austin a couple of times over the past few years and went to LaBarbecue. Very long lines there, but only about a 2 hour wait. Incredible brisket. Skip the sausage links there as well. Great video!

Day to day you might get somewhere between awesome and good. Like the guys said, there is a difference between how you would BBQ in a competition and how you would do at a restaurant. I think consistency-wise Aaron is good at delivering solid results. Some will prefer Salt Lick but for me I’ll take Franklin’s anytime.

Tomorrow, I will cook a brisket flat seasoned with just S/P. Maybe add a bit more pepper tomorrow. My first brisket cook in a few years. Thanks for the great videos you put out. It’s not more than any other good place. If you come to Texas and DONT try Franklin’s, you’re missing a real treat. There are many great places in Texas, Franklins is known as one of THE best, for very good reason.

That's how I would look at it; it's as much about the trip and the overall experience as it is about the food. The value of the food itself is tremendously influenced by whether or not you can (or would) cook it yourself. I have only tried one bbq restaurant (not too many in Michigan), and I won't be back. I had to ask what the brisket even was, as it was dry, shredded shrapnel from a warming oven - but some of the other people seemed really happy with it.

WOW...that's a big ole honking platter of BBQ goodness....though I dont know if a 4 hour wait would be worth it. If you ever get to the East Coast, in Charleston SC go to Rodney Scott's BBQ and Lewis BBQ...also in Georgia on Saint Simons go to Southern Soul BBQ...all are great places.

Thanks Harry for another thorough, objective review. Not sure if you're familiar with Little Miss BBQ in Phoenix, but i've gotten to know them very well, as they are, IMO, the only BBQ restaurant in Arizona that consistently gets their cook right. Anyways they've modeled their concept closely to Franklin (which is a trend i've noticed with bbq restaurants nationwide), and I notice the same problem with their smoked sausage, it's often much more dry than their other meats. I wonder if it just takes a different approach to cooking than pork butt and brisket?

I've lived in Austin for 9 years. I finally went there last fall and the only thing that I didn't think was fabulous flavor wise was the sausage. I totally agree when you guys say you wouldn't buy it again. Personally man the pulled pork and the brisket was out of this world when I was there. Oh man so so so good. I come from an area of the country when people say BBQ they think PORK! So having had a lot of whole pulled pork growing up man Franklin's was on the mark. Personally what separates his from the rest is the Texas style (pepper) rub he uses on it. Then the brisket. Well what can be said that hasn't been said a thousand times over. All I know is going down to Franklin's last fall ruined me on a place like Rudy's Country Store and BBQ.

I was on the line for a while for my first here. But I was turned back home, because I only had $20 in my wallet, didnt even know how expensive this BBQ is...lmfao So the next time, I came prepared. But it was worth it...

@Alfie Blake - I agree somewhat. It is true you can get just as good BBQ at Terry Black's BBQ down the road but waiting in line at Franklin's is part of what makes the food and experience better. Everyone should visit Franklin's at least once.

I haven't been everywhere, but I have been to a lot of the most revered BBQ places in both Kansas City and Central Texas, and Franklin's brisket was the best by a very large margin. I'd gladly wait twice as long for a couple pounds of that stuff

I agree. Once of the best restaurant BBQ in America and I've eaten over 100 in Texas. Many places like Pecan Lodge are very good also but the past 10 years I've eaten at Aaron''s, his consistency is amazing for the 100+ briskets he cooks daily.

I am blessed to be surrounded by good people at work who has sacrificed many time for the team so no food that I get can repay. The smiles were priceless that they got to compare against my BBQ which they have tasted during my 15 years prior of experiments and failures

@@robertmattingly1556 Great info. The only reason I'm overseas is to make money to fund my future business. I tried working with companies in South Carolina (Business/Management), but it seems my degree can only get you the bare minimum salary and I couldn't settle with that. I watched plenty of Aaron's videos and I've noticed how he markets his products and all and this has pushed me to do the same thing. Finance companies doesn't want to deal with you until you're bringing in lots of revenue....... cold world we live in.

Not many places I would wait 4 hours and Aaron's is one of them. IMHO one of the best restaurant BBQ in America and I've eaten about 300 places. He has amazing consistency to be able to crank our 100+ flawless briskets every day since I first at at Franklin about 8 years ago. He did not hit the mark on some of the other items but overall A+

So Harry, in you opinion, what is it that separates his brisket for the masses vs. yours for competition? Is it more of the "anticipation/word of mouth" thing, or is it something else? I know that you have won many top brisket honors and you have my ultimate respect for that. So I was just curious on your thoughts on that. Good video btw. Cheers @@

Aaron makes one of the best restaurant briskets in America and it tastes great. In competition BBQ, the judges only take a 2 oz bite so you have to blow them away with one bite with a symphony of flavors in their mouth. In comps, you are judged on Appearance, Taste, and Tenderness so you're trying to get a perfect score on a 2 oz bite. In a restaurant, you''re enjoying a meal with sides and drinks. The tasting experience is very different. In a contest, I would give Aaron a 8, 8, 8 but not a 9,9,9 score as the pinnacle of perfection is only found at BBQ contests. He cooks 100+ brisket a night and I only cook one brisket so it's also not a fair comparison. It's like comparing a Lexus to a Lamborghini. The Lexus is comfortable and fast but would not win a race against a sports car. Hope this makes sense! :-)

I've been all over and I'm not waiting 4 hours for food if Jesus cooked it !!! I'm guessing a lot of these people making comments don't know how or just lazy🤣!!! BARBECUE is not rocket science but to each their own, I have found better BARBECUE on a dirt road from a old man under a shade tree😁😆🤣. No disrespect to Aron, just don't like his setup. I think he could do just as well if he opened his doors at a decent time like most and keep paying customers standing outside like a bunch of buzzards 🤔

Yes, the locals do the take out option. Only die-hard tourists stand in line so they have a story to tell family and friends that they ate at the famous Franklin and waited in line for 4 hours. That includes also me as the tourist! :-)

This review is great because even though brother TRoy says he’d come back, the truth is there is BBQ close by that’s just as good with no crazy lines. There is no way after seeing this review that I’d be back for a second visit and waiting in those lines. This is more like a “I checked this off the list” type visit. @@zazuzonker sure you can make good restaurant BBQ at home if you know what you are doing. It's like listening to Carrie Underwood on the radio or being there for a live performance. Both are good but different! Life is short so enjoy every moment the best way you can. I can see the Grand Canyon on TV but when you see it in person, it's not the same experience. Eating at Franklin is something I'll remember for a long time and the memories with Aaron and T-Roy are priceless! :-) Wait for Thursday's episode when I show you how he works his its via his Italian pitmaster!
