Hi Harry get videos and love the channel. What is your take on cooking brisket fat side up or fat side down. I am cooking on a Weber smoke fire @225 for about 8-9hours and then wrapped in the oven until done. Can you comment on fat side up and down for both before and after the wrap?

This brisket looks absolutely fabulous. Now the SmokeFire is available at Austria and I received mine today. I seared some steaks and was impressed by the result. I‘m looking forward to try some low& slow. Would be a great opportunity to try this recipe. 👍 Thank you once more for your stress test videos. That helped me a lot making a decision. Hey Harry, I have seen you compare the Snake River black And gold, but how would you rate a Costco prime to a snake river? I am cooking for friends later this month and need two brisket. I hang long Costco in the freezer, but need another and am considering snake river just for fun. Opinions?

That brisket looked fantastic before you even got it in the smoker. No wonder Franklin's does so well. And I really liked that new slicing knive. Lastly the smoke fire did another great cook without incident. And I don't blame you for pulling the brisket after the wrap and putting it into the oven. Very nice touch and a tip of the hat to Aaron with the pink paper instead of using aluminum foil. Time for me to head to work. Have a great day.

I'm feeling like I'm playing Russian Roulette with the virus but not much I can do but keep my distance from folks,clean my hands,etc. Hoping someone says it's time to stop driving for a couple of weeks. Managment knows I probably just want to go fishing.

Actually I'm cost-efficient and process-efficient aka cheap and lazy! 😁😁😁 It takes 3 to 4 hours in foil or butcher paper phase to finish cooking. If you cook twice a week, you save 6 to 8 hours of fuel or every month 24 to 32 hours less wood, pellets, charcoal briquettes. Its a lot of money you can buy meat with! 😇😇😇

I always finish of in the oven I smoke my briskets for about 6 to 7 hours when I hit the stall I wrap in butcher paper in a preheated oven at 275 and finish it off to 205 I move it to the cooler for at least 2 hours You save on splits and can relax while the oven finish the brisket off comes out perfect all the time in fact you can do this with anything that has to take many hours to cook I started that years ago one day I was in the middle of a cook when it started to rain very hard I thought I will ruin this cook if I can't continue in my smoker so I moved it to the oven. When it was done it was perfect you would never know the difference so that's how I started

The EX6 seems to work for me albeit I have limited number of cooks on it so far. I liked it so much I bought a second EX6. I guess at the end of the day, the user also needs to be comfortable cooking with live fire as all pits work once you take the time to learn how to tease the best use out of them such as handling small grease flare-ups and stirring your pellet hopper now and then. The haters will use every reason to be critical and I just like to cook. Give me a shovel, some wood, chicken wire, some meat and I'll be happy.

I have WSM, Pellet, Kettle, Fireplate, Cold Smoker etc. I have compared them, but for jong jobs with beef i prefer the Offset with beech and finish also, like you, in the oven. (Exept there is a showdown with friends, then i finish with texas crutch in the pellet or offset. 😉❤) Best regards from Austria !

There is no stall as I don't cook with internal temps. Cook until crust sets, foil, remove when probe tender with bamboo skewer. Put your watch, clock, and thermometer away and you will be a black belt pitmaster!

How long would you keep a brisket in the smoker typically before you wrap it? Is the general rule of thumb 9 hours long?

Put away your watch and thermometer. Use your eyes and skill to cook until crust sets and be patient. Time and internal temps are NOT used in my cooking style and I've trained 3,000 pitmasters in 200 classes the past 12 years with many becoming Grand Champions once I taught them to put away their watch and thermometer.

Beautiful brisket. I've taken your advice on celery salt instead of regular salt, although I wish it were sold in bigger quantities. Question about spritzing vs water pan, which do you find provides better moisture for the smoke ring to form?

Save money as ground celery is cheaper than celery salt. Cook dry for crust and wet for smoke ring formation. My secrets is using my spray bottle!

I prefer to smoke first as the pores are open when cold so the absorb smoke. If you cook the meat first, you cauterize and close the pores and get less smoke flavor

On another video you made, you poured beef broth over and wrapped in foil. I like the extra broth at the end. Do you think it would be ok to dump some broth in the pan and place butcher paper wrapped brisket in the broth?

I prefer the broth in the package and not outside. Also, I use foil when I use mop as the paper is not watertight until the brisket oil seeps into it.

Hey Harry, I love your videos. I am new to the smoking world but I’m excited to learn and start smoking! My questions is as a beginner, would you recommend buying a pellet smoker grill or the Weber Smokey Mountain? I’ve been looking into the green mountain pellet smoker due to the easy of use but, I feel I will get better results with a Weber smoking mountain. I would love to hear your thoughts?

Best to master live fire cooking skills before moving to $1,200 push button pellets. Like learning how to do math before using a calculator. I just got a Traeger Pro 575 and have tried it a couple of times and feel like it doesn't really produce that much smoke. I'm wondering if all pellet smokers are this way or is it just the Traeger? For now, I purchased a smoke tube so I could get extra smoke. Did I waste $800 on the wrong grill? I would appreciate your thoughts!

Dan, it's always about the pitmaster and not the pit. You can get world class results in any cooker. You just need to use some black belt tricks. The measure of pitmaster is the food you produce and not the technical specs or type of pit you have. Give the smoke tubes a go. I've been told they work well.

Dale White Idk man. He had to use a drip pan and put it on the top rack. If you cook anything on the bottom rack that fat is going to drip down in to your smoker and then you have to clean it out. If weber put a ball valve in it wouldn’t b a big deal though.

Very interesting restaurant style brisket. Perfect rub combination. Do you have the new pellet hopper insert installed on your smoke fire? I really like your drip pan idea using the to rack for the meat.

This is $8 per lb. Costco Prime is $5.99. Sams Angus Choice is $3.75. Restaurant Depot is IBP Prime $3.75. I would cook the $3.75 ones as I'm cheap. Remember, don't obsess over meat grades too much. Try wrapping when crust sets and it passes Harry's scratch test. Lock your Thermapen and watch in the drawer before you start so you are disciplined to not follow time or temp, my young Paduan! :-)

Hi Harry, love your videos. I’m new to bbq and have a question for you. Wondering if you can do a comparison. I have a nice GMG pellet smoker but have been reading a lot about bbq lately and it seems there are many purists who only cook with wood. Can you compare/contrast pellet smokers with offset wood smokers and the difference with the end result and taste of say a good brisket? Been wondering if I have to get an offset smoker to get results like you and Aaron? Was just at Franklin bbq a month ago and loved it! Thanks and I look forward to your next video!

Shaun, as we have heard me say it many times, the gear does NOT matter. A good pitmaster can get championship results in a GMG, EX6, Kamado, WSM, Drum, and a shovel and chicken wire. Don't worry about the gear. Go out and cook and KNOW so you don't BELIEVE, including so-called experts and people like me. There is no substitute for the 10,000 hours to achieve competency in anything worth doing. You can't get better watching LeBron shoot free throws or read his books.
