Amy, I love this idea! Being older and caring for a hubby in stage 4 cancer I often find myself with little time to cook. He doesn’t eat much now on most days, so this is perfect. I would like to see more videos like this. Thank you for always finding a way to encourage others. God bless

Tip: You can put a small piece of paper towel at the top of each salad container. It will help soak up any moisture and keep your lettuce crisp longer. :) Also good to put a paper towel in the salad bag/box if you have any left over. Hope this helps someone!

Good morning Amy, I am also single and I make Sunday my cooking day so I do vegetable cleaning and prep for my meals and veggies with dip, I like to bake four medium potatoes then scoop out the flesh and mix with cream cheese, butter, bacon, cooked broccoli and green onions then top with cheddar cheese, stuff your potatoe skins put on a baking sheet and freeze, once frozen I will wrap each one individually and put back in freezer, this gives me eight servings and I’ll have this with a nice salad. I’ll make a stew and pack and freeze single servings. When I make spaghetti sauce I freeze that in single servings and I also cook my noodles and freeze them in small baggies as well. I will also cook up ground beef and package up in baggies and freeze to have on hand for what ever. I love to cook so I will package up some meals for my friend as well who is alone too and won’t cook proper meals very often so this way it’s there for her to just heat and eat. I just wanted to pass on some ideas for you and your followers, have a great day!

I’m working on a month version of single meals for my son. I’m prepping everything. I have done breakfast burritos, breakfast biscuits, breakfast rice, and overnight oats. Some mornings I have him scheduled for omelette with prechopped ingredients. He enjoys cooking so much. I try to prep meats in their marinade in individual bags , label and freeze them for him to assemble. I never thought about freezing the rice with fillers such as beans & veggies. I loved this video!

I'm pretty sure this is going to help a lot of people. I know 17 years ago when my husband and I got married it was so hard for us to cook for just 2 people! I grew up in a household of cooking for 6 people and my husband was used to cooking for 4. So needless to say we always ended up cooking too much for one meal. So we had lots of leftovers and extras I would freeze for later. We ended up only having one son who actually turns 15 today and we still normally cook more than what's needed but just not as much as it was in the past LOL. Having plenty of food already in the freezer is nice especially for those nights you really don't feel like cooking and also those times when money is running low!

I hear you! We were in the military and really making a dollar go a long way. From taking one pound ground and splitting into 2 meals for family of 4 years. Back in 80-90 were a whole lot cheaper but still a budget for a month was 60.oo-80.00. Had to be very creative. Alot of beans.

@@Barbaracoyle First of all I would like to say a big thank you for your service! Second, I was born in 82 so growing up in the 80s-90s I too remember eating lots of pinto beans and taters. A lot of times we weren't able to have a meat with our meals at all because it was so expensive! I also remember helping my Mama clip coupons so we could spend as little as possible. I'm still thankful for that because I still clip coupons for myself now to help out with cost. My parents both worked back then my Dad worked as a mechanic for a trucking company, he was also the full time Assistant Pastor at our church and my Mama was a full time Registered Nurse. One thing that still bothers me today is how underpaid and underappreciated our military are treated! I personally think our military and veterans should be taken care of the best when it comes to being paid, having full access to the best healthcare and they should be able to eat good for every meal and not have to scrimp and save every little penny just to barely get by living paycheck to paycheck! I think that's just the least our government should do for y'all with as many sacrifices y'all had to make just for choosing to serve our country! Ms. Coyle I want you to know you have my most sincere and the utmost respect and I will be praying for you and your family! I also want you to know I mean every word of this from the bottom of my heart! I guess I would prefer more Old Fashioned type foods (meat and potato types) as I cannot eat Mexican or spicy foods or black beans. Rice I can do. Cooking for 1 has been my life for a few yrs. Now and I love it! it was an adjustment and having lupus /RA it had a few adjustments but...I designated 1day every 2 weeks to do what you show here. I love the deli containers and find them to be perfect single portions ....I make stuffed shells bake, cool then divide into the containers , they hold 3-4 with a little sauce. Meatballs I do also ...3 large fit into the container ....I use them for meatball subs, or pasta dishes. I make mini keissers subs ham and cheese freeze and toss in my toaster oven, I'll also make a chilli meat sauce, ...my newest thing is I bought a very small crock pot basically enough for 2 people. When I buy meat I divide it into single portions when I freeze it..chicken breasts, Italian sausages, stew beef, etc... I will put in med. Potatoes 1 carrot, celery, onion a small pack of stew beef ( 8-9 pieces) add a little bed broth... And in 4 hrs I have a full meal. I use the smaller crock pot a lot..it's enough for my dinner and lunch the next day. Cooking for one can be difficult at first...but I found the better I ate the better I feel. Great video Amy. I still enjoy you big family cooking I just down size it a bit! I hope the lovely lady who asked you for this video finds it helpful!

I half your recipes and then freeze then in smaller 1-2 person size containers and freeze them. That means I don't have to stock my freezer for months.

I've saved so much watching your videos, not only money but food, we probably have cut back to less than a third of food that used to end up in the trash, I used to hide the food that I had to throw away deep in the trashcan, just so I couldn't see it! I prep ahead when I can. It is so much easier to decide what is for supper! One tip that helps me out...since I have to utilize the local Food Pantry, I get rice and many canned goods from them. I prep the frozen meats (usually chicken) and get my meals done. Thanks for the meal ideas, Amy! God Bless!!

This was great and I appreciate that you were able to create a plan for a single that still felt like home cooking that would be done for a family. How about creating a plan that a person could make and meal-prep ahead for an elderly couple? When my mom was in the caregiver role she got so tired of cooking yet missed good old comfort foods. However... like many elderly, she and Dad were supposed to be eating low sodium and low fiber. She was very independent and didn't want a lot of help but it was nice to be able to send a few freezer meals her way. When it was just her she was dealing with loneliness, loss and her own health issues so I tried to make meals that would tempt her but not cause a problem with her diet. Now that is a big challenge. Maybe you could create a meal plan that would be a blessing to the elderly.

I make normal size recipes and after i eat the meal I divide the rest up into individual portions and put in the freezer then take them out at a later date for a quick lunch or dinner saves so much time ans still delicious

I used to cook larger meals for YEARS and now its two people and I was stumped for a long time (Seriously who actually meal plans for 1-2 people?) used your large family meal Ideas (like the breakfast sandwiches and burritos) and broke them down to make smaller freezer meals, Dollar tree sells a three pack of Foil pans with paper lids for the freezer (then I found basically the same thing on Amazon plastic containers with lids that can be washed and reused). so I can still cook larger meals and break them down to 2 person sized. I consider your videos an Inspiration source. Thanks !

The food pantry cooking would be great. Some items is rice, dry pinto beans, canned green beans, one can soup cream of chicken, canned fruit, and canned chicken. For two people for one week. I am a single person. Only thing is... I can't cook/bake due to my disability. My mother does all of that, for me, herself and dad. But these things can easily be done times 3, and then all of this becomes really useful. Your bigger "plans" are sometimes hard to do for 3 people, kind of hard to envision, but this can easily be multiplied by however much you need! Thank you!

Make ahead, bacon,sausage n can use as needed ,I do breakfast burritos with veg, n or english muffin egg,sausage sandwiches n freeze them, make a pan of lasagna n or chicken fettuccine white sauce n devide it up n freeze, chicken breast chop up, cook now or later ,freeze in single size ,add veggies n stir fry, get small loaf pans ,make little meatloafs , beef,bean,cheese burritos ,I freeze, almost any meal you can split up n freeze or prep. Oatmeal with fruit , pancakes n freeze, bake a bunch of potatoes n use as needed , sweet taters ,mash or cut up n bag up n freeze .

Hi Amy finally watching ur video. Taking a half hr break from work. I would live a plan for a family of 4. Cause sometimes I want to try ur plans but urs is big because ur family big and I want to know how much stuff I need to have for meals so I dont cook too much
