On Insadon st i don't remember, there's a lot of good options there so just pick one. At the airport, there's a food court that sells alcohol and a few different food stands you can order food. I was in terminal 2, I think terminal 1 is bigger.

Hi, I am planning to go to Vietnam this November. I have a US passport and my mom has a Vietnamese passport and we will have a layover in incheon airport for 15hrs. Will my mom(viet passport) be able to go on this transit tour visa free? Thank you!

If she's living in the US or has a US tourist Visa, I believe she can. Korea has a "tourist in transit" where visitors from certain countries can visit korea for 30 days visa-free as long as they're traveling onward. You may want to double check that.
