that port you blocked off on the carb the black thing next to it is the choke hole. You will either need a pull choke or hook the original one back up. The bike will run Rich or all too much air in. I think that goes directly to the enrichment part of your carb.

A good place to get reproduction graphics is Graphics Producer, they have a lot of custom graphics too
