Nice trailer project! For spare tire, I would recommend mounting to the front crossbar you have. Offset to the curb side is probably most convenient. I use my trailer for hauling cars a lot, so I put mine on the passenger side ahead of the fender and it's always annoying if I have to back the trailer on the passenger side because I can't see the wheels. As far as adjusting the brakes, you can buy brake packages that auto-adjust when you back up, the Dexter brand I know offers Never-Adjust brakes.

Too narrow for cars, and I want to put my ramps somewhere. those brakes sound perfect!
