Circles is how I was taught as a young-un. I don't do it anymore, but if I get a really stubborn burr, circles with a very light touch usually peels it right off the edge and leaves the burr laying on the stone.

Hello Chris. I am only a couple of minutes in the video so far, but i want to tell you my experience with Victorinox small paring knives has been nothing less than excellent. We have been using them at home for at least a decade. Now bare in mind, i tried both the staight edge ones and the serrated. The serrated ones are much better and last forever. Normally i hate serrations, but for such small paring knives they simply work. If you get a chance to try serrated Victorinox paring knives, you will remember me. I also posted a comment about my experience with Dmts on your last video. Please have a look if you have not already.

I love smokey mountain knife works. I don’t live too too far from it. About a couple hours. Next time I go there I’m going to pick some of those opinels kitchen knives up.I have a #8, great geometry and takes a smokin edge. That knife you got is incredibly thin, its gonna make for a great utility knife. How much were those? Don’t worry about the time. Myself and my other sharpening buddies enjoy long sharpening videos. Yep I'm 78 and I was taught that circular method with the blade almost flat when I was a kid. My Dad and Grandfather did that. Never worked for me.

I do some knives on my kme sharpener and others on stones but I have to do the sharpening the same direction by switching hands instead of reversing like you do.

Thank you for this and all of the videos, I have learned a ton of things. I have a Takeda Aogame (sp?) blue super, If you ever get one, please, please do a video on how the steel stacks-up against something like your Hinderer. Takeda knives are scandi grind, so the comparison might not be equal. Moritaka also provides knives in Blue super, and are also quite nice, , , (not a scandi grind). . . blue

Takedas are very nice. So are Moritakas. Japanese knives like those are ground so well that I wouldn't really think about the fact the Moritaka has a secondary bevel. It's so small that it almost acts as a microbevel and you barely notice it. I have more experience with Moritaka and their Aogomi Super is excellent, some of the very best cutlery steel I've ever used. It takes a screaming edge and holds it forever

I watched the video and I'm not blue. What about sharpening a knife with a bevel angle steeper than you'd prefer to begin with? Wouldn't you want to thin the edge then put a micro-bevel on it?

For one forget microbevels. If you want a different angle change it to you're preferred angle and perfect the edge. Micro bevels are for people who can't sharpen.

It's always fun to watch your sessions. I really should start a reel of some of your quotes, they'd be priceless. Anyway, I have to ask: why bother with oil stone(s) at all? They seem messy, and well, kind of slow to cut on such a thin carbon blade. Set me straight. Seriously. I've got my ceramics and my diamonds, why bother with anything else anymore? I just grew up with them man. I like the way they cut and work. They cut pretty quick, I was just being picky about the burr lol. the Crystalon and oil cut completely different. For shaping they are where it's at. For refinement diamonds are my go to.

BLUE! Daddy used the grandpa method of sharpening. When he was done with a knige you could shave with it. He was hard on a stone though, but used only pocket stones.

I have bad allergies nasal stuff best way to control is nasacort, or rhinocort or one of the over the counter nasal steroids. You need to take them every day in season though. Just a hint in case it helps anyone. Hint hint.

Me, too. I get a generic nasal steroid spray from the VA. Before spring arrives and ragweed time in the fall...I use it religiously every day. It does a better job than Claritin or the other meds. Sorry I didn't think to mention it Chris. This allergy season has been pretty bad but I got that spray into my system early...it rocks!

My kitchen knives usually need to be sharpened before every use because they get thrown against forks and spoons and the edge gets damaged. I gave up trying to put a really good edge on them. Blue blew!

lol my wife does the same thing, I'll get the water stones out and take it all the way up to a 8000 grit, mirror polish. 1 Use and into the dishwasher. Chips dings.... OMG... so I just put them on the 220, finish with a 1000 and call it a day now. I ain't spending a darn hr polishing that edge like it's a Hinderer Xm-18, just for it to look nice 1 day
