All rates in Naval Aviation use hand signals, both on the flight deck and the hangar deck due to the noise levels. As a former ABH I still use them in traffic. There's actually an informal gesture called "pull your head out of your @$$" that I still love to use 30 years later.

The pilot doesn't choose when the catapult fires, they are along for the ride after they throttle up on command from the shooter. The shooter first checks a number of people that each have a specific safety related responsibility and can "no-go" the launch. The shooter looks and points at each in turn to ensure there are no objections and then only after no one objects they touch the deck and point. That signals the intent to launch the catapult to the catapult officer - the one that actually "presses the button" But even then the launch is synchronized with what the ocean is doing; on a ship at sea with the bow pitching upwards and downwards based on the waves, they don't want to launch an aircraft if it's going to be fired I to the ocean because the ship is pitching downward when the aircraft reaches the end of the deck...

The French use the exact catapult and arrestor equipment as U.S. carriers, therefore their aircraft can conduct cross deck operating on our ships and vice versa. They no longer use the bridle method to launch their aircraft ever since they retired their Super Etendards, and that was something to watch.
