Thank you for this wonderful tutorial. I just saw your video and I got engross watching you. I stop making French Macaron cuz I cannot make it right. I’m not a baker lol just want to learn and try for my family. Now you made me feel like to try and start making this again. Do you always use almond meal? Cuz I always use diamond super fine almond flour. With this fine flour do you still use food processor? Thank you and hope to hear from you. Any advice about the eggs. As as the temperature of the kitchen so not to ruin the macarons? I’m sorry still curious. Thank you again I just subscribed on your channel. I’ll be watching more of your videos 😊

I'm glad you like my content 😁 I always use almond meal and never had problems, if it is not fine enough I will put it in the processor, being careful not to release the oils from the nuts (short Bursts) but the almond meal i buy is very fine most of the time. Eggs don't matter, just make sure they are room temperature. Humidity can be a problem with macarons, if it's a very humid day I will make them in a room that is conditioned. Good luck! Once you get a hang of the recipe it's pretty easy

Im a chef/baker and normally use the Italian meringue method...but tried your method and skipped the drying and came out lovely. Good recipe keep up the content

I'm glad it worked for you! I'm also a baker/pastry chef and used the Italian method alot, but this method is so much more efficient, faster and a little less work. I find myself using it more in my older lazier age lol

Once I get used to your accent, I just have to say you are an excellent, excellent teacher! I've only tried macaroons once and I so messed up! But I think with your instructions I think I will be very successful. Only one question I have. Can you make them when it's rainy out or very humid?

Thanks so much! You can make them when its rainy, but if the room is very humid try and move to a room that isnt as humid or if possible turn on the air conditioner, they can still turn out good with humidity, but the fail rate is much higher

Will do early next year! Italian is still my favorite way to make macarons, they can be more stable. But if you follow this method in this video you will get the same results. But I'll definitely make an Italian method as soon as I can

Nice video. I do prefer the buttercream center over the chocolate gnash, but it looks good. How is the cookie part, do you have issues with air getting in between the top of the cookie and the bottom? How does on prevent that?

Thank you! I also prefer buttercream, especially salted caramel buttercream, which I hope to make a video on soon! When you say the top and bottom of the cookie, do you mean hollows? I rarely get hollows these days especially the way I do it in the video, hollows usually happen because of incorrect meringue mixing

The yolk broke but you still used the whites, so perfect whites aren’t as critical in a macaron? If I were topping a pie or making pavlova, I would’ve put that one aside, but know some things aren’t as precise, like a sponge or something. ?? So glad you popped up in my feed! Subscribed! Haha everyone I used to work with loved that whoosh whoosh! Even after all these years I still get a few eggs that crack wrong! A little yolk is fine, but obviously you need to be careful, preferably no yolk. To be honest I didn't even know this happened in the video, I'll go back and have a look 🤣

Cream of tartar is good for egg stabilising, but if you mix the meringue properly like I did in the video it's not needed.

This oven doesn't have a fan, but even when I bake them in my kitchen oven, I never use the fan if possible. If you do use a fan forced oven with no option to turn the fan off, drop the temperature by about 10 or more degrees

What temperature are you baking at? Maybe your oven's top temperature is too high, try dropping about 10 degrees

One of two reasons... Even though you set your oven to 300 degrees, it might be higher inside. You could purchase an oven thermometer to better read the internal oven temp. Reason two... the macarons may be cooking too long. Cooking time should be 15 to 20 minutes at 30 degrees. I find that 17 minutes work for my oven.

Hi awesome video So I followed you recipe but added 10% of egg white weight of coco powder,mixed everything well but when it came to cooking complete fail 2x batches…. Tops were beautiful but all the insides would stick to my mat . Tried cooking in normal oven 300 for 18 min was a fail and285 for 15min failed

Thank you! Reduced the egg white in the recipe? Macarons are very finicky any variation in the recipe can mess up the macarons. If I was to add cocoa powder to this recipe I would reduce 5 grams from the almond flour and 5 grams from confectioners sugar and add 10 grams of cocoa powder

@@tony22226 all good no problem, let me know how it goes. Keep the cocoa change to a minimum, 10 or 15 grams at the most. Chocolate macarons recipes are usually a bit different to plain macaron recipes

You need to bang the trays more after piping or pop any bubbles with a tooth pick before baking to remove those bubbles, I get them sometimes on mine too.
