I made so smooth and sweet, french silk chocolate pie.
crispy pie crust, silk chocolate mousse and heavy cream.. that combination is heavenly great.
*Whipping butter is for put some air in butter. It gives you more smooth texture to chocolate mousse. You don’t have to, but I recommend this process.

9~10 inch pie
*Pie Crust
150g(1cup plus 1Tbsp) all-purpose flour
2g(1/4tsp) salt
141g(10Tbsp) unsalted butter (cold)
30~60g(2~4Tbsp) ice water
*Chocolate Mousse
175g(3/4cup plus 2Tbsp) sugar
55g(1/4cup) brown sugar
2g(1/4tsp) salt
3 eggs
170g(6oz) dark chocolate
113g(1cup) unsalted butter (room temp)
120g(1/2cup) heavy cream
180g(3/4cup) heavy cream
18g(3Tbsp) unsweetened cocoa powder
25g(2Tbsp) sugar
*topping
600g(2 1/2cups) heavy cream
65g(5Tbsp) sugar
dark chocolate (shaved)
