You really need to Checkout the German kebab where the origin of the modern Döner Kebab is, maybe you can do a collab with Holle2164 who is a german food influencer who specialised and is known for this Döner Kebab Ranking. Also in Austria - Vienna the restaurant "Ferhat" is known for being the best Döner Kebab in the world

@@mighty2k3 I live in Vienna and I have been two times at Ferhat. Yes, it is excellent. Not only because they make everything (meat, bread ect.) themselves, but also because they use a woodfire oven. BUT, you have to wait there for over an hour until you can order, because it is so crowded. I'd rather have the second best kebab immediately than having to wait for the best one 😉I've never been to Istanbul and thus never had one at Tatar Salim, but I highly doubt, that Tatar Salim can't keep up with Ferhat. Would be interesting to know, if Holle2164 was ever in Istanbul and tried one there...

I am ex-chef at doner kebab in Turkey. Marination is simple. Depending on the region it changes a bit but my fav marination recipe: - Yogurt - Onion juice - Olive Oil - thyme (if lamb), black pepper, paprika powder (sweet), cumin, salt If the marination is too thick, you can thin it using mineral water. It should have a consistency of soup. This was for beef + lamb but if you wanna try chicken, thats way more easier. Chicken doner marination; - galeta flour - sweet paprika poweder - salt (other then salt, you don't need other spices). You basically butterfly the chicken breast just like the beef but while marination, you gonna put little bit sweet paprika and galeta flour in order. make sure you don't over do it.

I used to visit Türkiye a lot to climb & visit archaeological sights. One of the things I always loved was that places to eat were always happy to invite you into their kitchen to see how things were done & how clean it was. After a couple of weeks in the Köroğlu Mountains we were in Ankara for a little rest & a couple of us went looking for something to eat. It was a still night, & we'd wandered, but no restaurant was taking our fancy. Then this tantalising scent wafted from a tiny old narrow ally. We ventured down & found an old man. He was tending a push along cart with a charcoal brazier built in. He didn't speak much English, & our Turkish was still spotty. But between a bit of Turkish, English & German we ascertained he only did one dish - a type of chicken kebab. We ordered two & chatted while he grilled the meat & cut it on a wooden block that was so dished from years of chopping that it looked like a U-shaped glacial valley. He wrapped the meat in beautiful bread with a few simple condiments & then rolled it in paper. We found a place to sit, under clear skies, still & warm air in this beautiful city that has been inhabited since the stone age. It was the best tasting chicken I've ever had. Simply spiced, moist, all wrapped up in bread that was as soft as silk sheets. We didn't speak while we ate - we didn't need too. That happy moment sticks in my head decades later, & I'll never be able to recreate that simple charcoal cooked meal. But I'm happy with that, some moments should be preserved in the amber of memory, to be looked at & cherished. 🥙

Hi Alex, I know it's a longshot for you to see this but just in case, I'd like to share with you (and everyone) that it is possible to get döner close to the level of Turkey in France. You would just need to travel to Strasbourg ! When i first moved here from İstanbul i was sure i could never eat döner here, but then I came across a shop called Kebs Baba, which is a local döner restaurant run by second generation turkish migrants. Their meat's quality and marinade is truly the closest I had to Turkish ones all over europe (so far) and they also give you the twist of "Berlin style sandwiches" if you want, with so many options. If you ever have the chance to come to this part of France, you should definitely give it a try.

When I go to this place, I never eat onions because it distracts from doner's taste, just meat and bread. Also there is a lavash at the bottom of doner pile, soaked in fat, that is a treasure. It is a rich dish, acidity is needed, you can have it from sour and salty ayran, that is the purpose of it, primes your taste buds for the next round.

I feel like the amount and style of the ads got to a point of heavily disrupting the videos and making them hard to watch. Which is really unfortunate, because I am super excited about this series. I counted 2min of Better Help, 2min of Pans and 10s about a KZbin channel... and one must also count the 20s of Patreons at the end. That is 4:30min of a 15:15min video. And they are not really integrated into the video at all, so they take me fully out of it and destroy the flow of the video. I know that stuff costs money, so I can understand if cutting back on the amount of ads would be hard. My suggestion would be to at least put the pan-ad to the end of the video. The people who would actually consider buying them watch your videos completely anyways and you only have one interruption left in your actual video. Also I miss the bar on the bottom of the ads.

Here's another fun etymology bite - döner is actually short for döner kebap (rotating kebab), from the Turkish verb dönmek (to turn/rotate). Combined with yaprak, it literally means "rotating layers." And while we're on a roll with rotating meat linguistics - the word "shawarma" (شاورما) comes from Turkish çevirme, meaning "turning" (from çevirmek - to turn/rotate). So whether you're getting döner kebap, shawarma, or Greek gyros (meaning "turn/spin"), you're essentially ordering some variation of "that spinning meat thing!" 😄

Love your videos Alex! Sadly here in the US for the most part everything is corporate and you rarely see cuisine like this any more. Back in the 1970s in Chicago you could find Kebab, Shawarma and Gyro shops with sizeable meat stacks of 3 to 4 feet tall but as the years wore on they shrank until they just started grilling up a chopped up oily mess. its nice to see a proper Kebab shop that is obviously loved by its community.

There is nothing like Doner in Istanbul. It’s the only place I’ve ever seen the meat cooked with wood or coals and it’s beautiful and tasty. What you get in other countries is just nothing like what they serve in Turkey and having lived there for a couple of years and tried very many places, the Doner is one of the things that I miss the most. Yum Yum. That said, I hope you also tried the pide!

You should try eating a doner in Ankara. Cici Piknik, Pecenek Doner, Karagedik Lokantasi, Meydan 1957. Average doner quality is far superior than Istanbul.

They do have charcoal cooked tacos al pastor in Mexico City as well. The meat is haram pork because the immigrants were Lebanese Christians but they are indeed using charcoal at the very best ones instead of NG or LPG.

I've checked out the price of Alex's Saucepans £180 for a small one up to £630 wow! I'm trying to figure out who would pay that kind of money. A home cook? A pro Chef? I can't imagine any pro Chef going to work with their own saucepans, lol Gordon and Marco didn't. They did quite well with regular saucepans. This is a gimmick Just like the £120 chef apron Where would you wear it? most home domestic cooks DON'T wear aprons when they cook at home and Professional Chefs wear company provided Chef wear. So where would you wear this Expensive Apron? But there we go some people have more money than sense. It's not about your tools but about your skill as a Chef.

The best turkish authentic kebap dish in many peoples opinion is called "Iskender Kebap". Its my absolute favourite thing in the world. If you dont get the chance to eat it in Istanbul, maybe try it in Berlin (if thats a stop on your list)!

In case you need to know, most of these kinds of places use onion, milk, salt and black pepper for marinate. But they use onion after blindered it, mainly for its juice. and if you have enough time, you should try Iskender Kebap which made from ground beef. You can find it the most famous one in Bursa, where is next to Istanbul. I strongly advice that.

@@OG-ge8nu No, a Donair is not a Döner. It is inspired by a Döner but it is it's own, very separate thing. And you can't really appreciate it unless you're drunk on draft beer at 3am at pizza corner. It is... odd... to have one's hometown delicacy be an actual violent assault on the senses. But it's better than most Canadian cities which have none! Your lazy jingoism on the other hand: leave it at home.

The french one is more shawarma inspired, i guess. In Germany there is also salad, tomato, cucumber, red/white cabbage and even feta-like cheese in most Döner + a relatively huge amount of sauce.

Thank you for showing the world what the real Döner Kebab looks like. This Turkish dish is really excellent. I dont say that most of the time the cheap replicas in europe are bad but you cant compare it with a real Döner Kebap. But for sure in Turkey you cannot sell these immitations from europe. Turkish people know the standard of a kebap. But in europe people dont have the background and the historical expertise to compare if it is actually a good dish or not. Most of the time it is mediocre but still good enough for ordinary european people.

@zouLworm why high horse? Again nobody says its bad in europe but if every Turkish kebap vendor would start to try to get close to its origins everybody would prefer the original version. But it woul be to expensive. So thats not possible. People in europe dont know what you have to expect when you eat a Döner kebap. So they cannot compare. They dont have the expertise and the historical background. But as I said before this doesnt mean it is pure crap otherwise it would not be that popular. They simply cannot compare. Btw. not every Döner kebap in Turkey is good. For sure not but the real Döner kebap you can only fine in Turkey.

It is glad too see you doing some content about our national dish "Döner Kebap". In my opinion, "Tatar-Salim" is so accurate about the traditional recipe. No sauce, no other interference, just the marination, some kick from the seasoning and taste of meat with some touch of onion and freshmade "lavaş" flat bread. That is the traditional way. Hope you visit another Türkish cities about well-known with their own Döner recipes. We are staying tune friend, we need much more contents like this.
