Hey my bro, nah, I’ve been a dish washer in a high end restaurant when I was 19, but working with a melting pot of chefs (Chinese Italian Pakistani Persian)who cooked there own off the menu traditional dishes before dinner service really opened up my taste buds, never wanted to be a chef- but wanted to eat that food lol yeah got really camera shy when I started to eat the fish head 😂 wanted to cut to a commercial lol but yeah thanks for supporting our vids and acknowledging wifey, she really does her best with what we’ve got, I wish my kids would eat more fish and enjoy it, but man, I’m sure when there older they’ll smash it, but yeah thanks again appreciate it heaps

There has to be some kind of strong ancestry in my line 😂 I can’t help gravitating to these flavours- and yes the lamb skewers- I had a training partner introduce these to me 20 years ago, strong as dude, he was from northern china, a lot of Mongolian influence he explained when we’re eating these skewers, proper wood fired skewers- I was done with propane gas bbqs after eating this, lol cumin chilly deliciousness!!

Cooking it whole is the way to go! We would grill our whole snapper on the bbq with just a little bit of salt. We take chunks of meat and wrap it in rice paper, a lot of fresh greens leaves, herbs and boiled vermicelli. Then dip the it in nuoc mam dipping sauce.
