I have seen many KZbin videos on people preparing and cooking them with success. I cooked the small ones with a lot of success. They taste really good.

I have caught and eaten several hundred different fish species from Hawaii to Alaska to Louisiana and Florida, to 'everywhere in between'. Drum are much higher on my list than bluegill and crappie. It's all in the preparation. You don't cook a ribeye like you cook a pork roast. Same goes for a lot of fish species that aren't commonly eaten.

The taste isn't for everyone, but freshwater drum (we call them goo here in Louisiana) is best cleaned and filleted and kept really cold as soon as reasonable after catching. Soaking the fillets after cleaning in milk or salt water prior to cooking will help as well.

The best thing to do with drum is make a red gravy Court-bouillon. We pronounce it coo-bee-yon in Louisiana. Some chicken stock, diced tomatoes (rotel works well), tomato sauce, tomato paste to get the right consistency, garlic, onions, bell peppers, salt to taste and your favorite spices. Sweat the garlic and veggies in some oil first, then add the stock and go from there. Add the chunks of fish last after it has been cooking for a while, don't stir, let cook for longer than you think is necessary. Serve it over rice in a bowl. Between thin soup and stew consistency.

I had some this summer super fresh and kept cold- fried them and the texture was like scallops- meat tasted incredible. Blew my mind how good it was. Now trying to find spots here in Northern Indiana to find them regularly.

Gasper Goo is good, it depends where you catch them and how you cook them. The taste oily from large river systems so you have to smoke them. Scale and gut them, season heavy and stuff the rib cage with lemons and onions. You will change your mind

Hey Cole. I have used drum as a poor man's crab boil. Filleting the drum, and boiling them for about 6 minutes. Dipped in garlic butter is amazing.

Drum is fine eating. Secret is the fish has to be alive when cleaning and the filets have to cooked right away or stored in ice until cooking.

I’ve had drum one time and it was pretty good. Soaked over night in salty ice water, boiled with some Cajun seasoning and dip it in melted butter. The texture was firm and flakey, so maybe the salt water/ice soak was the key.

Not sure about drum, but growing up in the south, there was always those fish that had that same issue. My mom used to soak them in buttermilk for a few hours, (it would draw out that fishy oil and taste) then batter and fry. She would always fry them a bit longer and at a lower temperature, and they came out a little more flaky and bearable to eat. It's funny. Here favorite think to serve them with was crinkle fries or mac-n-cheese. Guess it must be a Southern thing.

Drum is actually good if cleaned quickly and kept cool. They are related to redfish and if fixed properly they eat just as well.

Cole, we used to soak under appreciated fish in saltwater in the fridge for 24 hours. The other thing you can also do instead of deep frying it, cube it and cook it in a spicy gumbo. There are so many ways to cook fish that there has to be a way.

I almost always soak everything I catch overnight in saltwater, even if it doesn't need it. Soaking them in hot sauce before breading, or soaking in milk in the fridge are good options as well. Hey, thought I would add maybe marinade them in a vinegar based salad dressing, too, before breading. Vinegar would cut strong flavors. Cooking longer and lower to soften if they're tough.

Drum are considered rough fish in my state so theres no limits on size or amount. I take them home every time I catch one, I slow cook them and the bones fall right out easily. many people tend to dry fish but you dont do that with boney fish, the secret is to slow cook them with spices and then pull the spine out and all the rib bones come out with it. Drum taste great this way.

Cole the next time you cook drum. Take a few fillets and soak in lemon or lime juice for a few minutes and even better put a few in fridge and soak fillets overnight This marinade with your pick of seasoning will greatly enhance the texture and taste.

It's all psychological. There was a fish fry where they fried walleye and freshwater drum and served it to people as walleye. They weren't told it was freshwater drum. Everyone said the walleye tastes great and tastes the same. They were later again served both walleyes and freshwater drum but this time was told it's freshwater drum and people suddenly changed and started saying the freshwater drum don't taste good.

Okay, Cole if you're cringing taking a bite, you're doing something wrong. You need to ride the knife about 1/8" above the skin and remove the excess red flesh. The fat and iffy tasting part of the drum is between the flesh and the skin. If there is a lot of maroon looking meat on the skin side you dove too deep with the knife. Next when you have your drum filleted out, you should notice the thick meat above the rib cage. Drum that is too thick turns it into a chicken breast texture and overcooking it will make that worse. Take your knife and you should see along the back-strap where it gets thick, slide the knife into that thick part and split it into 2 slimmer fillets. Drum is nice and flaky when cut thin, think pike fillets kinda thin. Last works on even the best tasting fish is to soak the fillets for 24 hours in fresh buttermilk. Last is bread it up out of the buttermilk pat dry and coat in regular flour, cornmeal doesn't work well with drum FYI, best used on catfish. Next dunk the floured fillets in an egg wash and then lastly into wither Japanese style panko or plain bread crumbs. The panko will give it a crispy coconut flake texture and bread crumbs will give it the texture of fried cheese sticks, the latter is the best breading for this fish. Also, larger drum taste better than smaller drum, not sure why, but they do. Last thing to remember, you walleye guys will back me up, catching drum goes hand in hand with catching walleye, they school together, and eat the same things, where you find one, if the other species is in that waterway, you'll find the other ;) Tight lines everyone and bon appétit!

You have to cook it longer to break down the connective tissues in the meat. At least 15 minutes more at a lower heat. You can also poach it first,let it cool and then bread it and deep fry.

Yes absolutely use the poor mans lobster recipe for drum. They also share that nickname poor man's lobster just because of the texture of the meat. It's closer to lobster or scallops. Try just boiling chunks of fresh water drum in powdered Crab boil and a bit of sugar and a couple of lemon halves. It'll knock your socks off.

My experience eating gaspergoo has been the same as yours Cole, just don’t care for them but perhaps treating them like poor man’s lobster is the key like a few others have mentioned. Boiled in crab boil & dipped in drawn butter, that just might be good. Black drum or saltwater drum up to a certain size are of course very good table fare, totally different fish albeit they look similar in some respects.

Good morning from Connecticut,...Cole, When eating fish like drum, or a merganser saltwater duck like we have in Ct , you crank the stove up to 375° and the drum or duck on a piece of 3/4" Plywood, season to taste and bake the fish or duck for 1hour or 2, Take the fish or the duck out of the oven and let them cool for 20 minutes. Now, take the fish or the bird and throw them away and eat the plywood. I eat lots of salads. They're safer. LOL!!! You and your wife...and Cypress enjoy the Holiday Season!!! God Bless...🧐🌲👍

You can't treat drum like you just caught crappie out of the lake LOL!! I know Asian people love it for the texture to make their fish sauce or some preserve that has a strong taste that ferments in a clay container for months, let the pros do it, it's adventure tasting. I know people in Wisconsin that love to smoke, they have this brine down to a science after years of tweaking, hands down it is the best fish jerky I ever had, slightly sweet, smoky, peppery, you just got the seasoning down to your preference. Drum is not trash eating fish, where we use lures and live bait for stripers and crappie, we get a few drum in between plus it's not regulated. We try to bring them back but the cooler is limited so most time it goes back. The fish is edible, you just have to be creative and make it a delicacy.

I have a recipie for as far as drum are concerend.concerned..get you a cedar board. Place the drum fillet on the board and cook over open hard wood. Once the board and drum have completely burned up....go to McDonald's! I will say drum make fantastic bait for shark fishing in the gulf. Years ago I had a friend that made what he called drum balls. Basically a hushpuppy with drum meat in it. It was ok but we had been drink ice cold beer so that might had something to do with it! I primarily eat crappie, sauger and flat heads. When I can find a good shellcracker bed those are excellant as well. It made my nauseated when you were eating those awful nuggets! Nasty....it basically ruined that fantastic box of Mac and cheese.

You can pressure cook drum like buffalo for about two hours with heavy Cajun seasoning then make fish patties like you would with salmon and you will be surprised 😊

Most people I know where I live in Texas consider drum a trash fish and that's whyi always throw them back unless i decide to use them for bait . But yall could have kept the dead fresh flat head catfish and just ate the blue with it unless it didn't still have pink gills because if the gills were gray it's no good

All large fish or trash fish can be pickled. Or they can be minced and made into cakes, adding whatever other fish or seafood you want. You have the protein, and none of the flavor. You have the spices. Add a dip, and you're in luck. It allows you to keep a drum and make use of it. You can smoke any trash fish also cheaply on a Weber. It's not the same as a smoker, but gives you a deeper smoke/cooked flavor.

Hey Cole, I love your series. Have you tried smoking that drum? Maybe brush it with a Dijonaise’ and slow smoke it. Then maybe mix it with some softened cream cheese, green onion and fresh dill. I don’t get drum down here in south Ga., but ive smoked mullet and other fish I deem not so tasty. Either way, congratulation an the pregnancy and I look forward to more of Jay and Cole.

What's going on is that the flesh dries out--dehydrates. That's why it feels so rubbery. You can avoid this by cooking them in foil packets or in a pressure cooker. For people that like their fish crispy, however, those two methods won't do it.

Deep fried one of these fish once,springy rubbery and slightly fibrous texture was not pleased. But highly esteemed fish like bluegill and crappie are not a favorite of mine either. Trout/salmon,smallmouth bass,striper and many ocean fishes are what i prefer

When I was a kid my Uncle used to let me help him with his trotline on the Mississippi River and he would catch almost exclusively Sheepshead Drum. I asked him if we were going to eat them he said, "Hell no! They taste like shit!" He caught them to sell to a place that made cat food out of them. The few catfish we did catch would get eaten or frozen to eat later, but the Drum were sold for cat food. He also would remove the stone-like nugget in their head and make rings and other jewelry out of them.

When you catch them split the tail and let them bleed out and then leave them on ice over night. Then clean them. It will taste better

Don't see the link for the Offshore Saltwater Reel your using. Your braver than myself I tried in once over the grill was not digging the taste or texture. So we usually cook it on a plank of wood on the grill then when its flaky we toss the fish in the trash and put the wood back in our scrap pile. We do the same for Carp however it is great cut bait for Catfish or Stripe Bass!!!

I told my wife to soak our fish in water overnight and add some vinegar. She misunderstood and soaked it in mostly vinegar, with a little water. Next day it was so good! Now I do this with red fish, ocean trout, crappie and basically every fish. I will never cook it any different.
