I had never tasted butternut squash but I work in a produce dept. and when one went bad I saved the seeds, took them home and planted them. I just fried and ate my first one moments ago. The ones I grew are about half the size as what you find in the store so it was much easier to prep. I sliced it and brushed it with grease to make the salt, pepper, and garlic powder stick to it, then fried it up as you did here. Well, after having my first taste, I think I will be growing a MUCH larger patch of them next year!

I appreciate your simple recipes. You've also been my go-to for using Jerusalem artichoke. I just pulled up a bunch (my first year growing) and hope to do a few things with it today. I pulled a few up a couple months ago and fermented it. Yum! I didn't see what to do to decrease the inulin - somewhere I read that you boil it twice, but you don't say what you do. I'll try mashed sunchokes boiled in two changes of water and see how that goes! I'll also try dehydrating. I've tried frying them before, much like this recipe, and they were quite good. Thanks again!

I have always cubed mine and baked it with some sprayed coconut oil and sprinkled cajun spices, then drizzle with some homemade ceasar dressing. I like mine blackened. I'm going to fry some right now in coconut oil and see how that goes. Thank you for sharing! I started this comment asking if you eat the skin but you addressed that in the end of the video. I wonder how many people eat the skin??

I have eaten some pieces of skin by mistake and they don't taste bad...kind of like crisp. Your recipe is interesting too. I hope you like the pan fried squash.

@@PrepperPotpourri I really hate to say I didn't. It wasn't bad but neither was it good. I absolutely love fried squash but butternut is a different animal with very little taste of its own. The only way I have found to enjoy it is to make french fries out of it and cover it with salt and ketchup.

THIS is how you eat butternut squash!! Like my Granma used to make! Southern Country cooking doesn’t add all the other frew frew ingredients like feta cheese and artichoke! Just fried in butter or bacon grease and served with fried chicken or smoked pork chops, some corn on the cob and a big cat head biscuit!

I recently tried a late squash, prior to watching your video. I made it nearly like you had done but i added a little oil with my butter. I also ate the skin. Everything was excellent! So much is handed down and most people use steps to remove the skin. I like having simplicity and the added nutritional value. What I'm trying to find now is grinding the seeded squash up and putting it raw in jars to can it. I am hoping to prevent loss of nutritional value thru unnecessary heating and the loss of taste from adding water during canning. I'd like to make something I can pour out of the jar, put in microwave and then pour over my ice cream. It can either have salt, pepper and butter, as in your recipe or pumpkin spice. The pumpkin spice could also be canned with the squash. I wouldn't be canning the butter with the squash in the first recipe.

I like butternut squash but they are harder than a brick. LOL I never fried them and will have to try this out. They also last for months and months after harvest.
