Awesome delish! I coat my children then put it in the freezer for 1 hour just like you. (No katsup, that’s Jamaican, a product of the British rule. No need for 18th century European preservatives when we have fresh tomatoes not being shipped thousands of miles.) Tomatoes are from the Americas. Being from the Latin Caribbean, I only use the most flavorful meat, usually, thighs.
