Wow, excellent recipe. I just made it but with a few modifications. I didn't have sage, so I used thyme. And for the sauce I added butter, cream and a touch of honey...Incredible!!! Thanks so much for this recipe Steve! You guys have a new subscriber here :)

I don't think I have ever had liver. I have had kidney pie. I was reading the health benefits of liver and want to give it try but have never cooked it before. What would you suggest I start with? This reciepe sounds delious to me.

Can you do a video on other cheap cuts like heart or skirt? I think Hugh touched on the offle with a stew but I'd like to see some more direct ways of cooking cheap meat like in this video. Love what you're doing :) keep the videos coming! Also I'm on my third batch of cured chaps;face bacon is a definite game changer in my kitchen!

Thanks for all the videos! I work at a fantastic kitchen in Montreal called La Salle a Manger. Every Monday and Friday we butcher a half pig and get our cuts for the week, make nitrate free charcuterie. Great video. I never cook with liver, but will be trying out tonight. I had chicken liver in tomato sauce on holiday in Poland and it tasted great and converted me. Determined to convert my family to it too. Husband thinks of liver as the tough variety!

Indeed. I too love my Mum, but she cooked lambs liver for nearly half an hour when I was a child, it was foul. Undertaken this way it is utterly different! Really nice.

We’ve got a great reciper for liver here in thr Philippines. You stew it with soy and a bit of onion and garlic. Well, that’s how I do it :)

I love liver but I was bought up in the sixties and seventies when you ate what was affordable plus there were six of us kids so either you eat it or go with out but I love liver and kidney beautiful in a liver and bacon casserole with mash potatoes delicious

Question! Do you rinse the livers before you prepare them for cooking? I have never cooked liver before so I don't quite know what to do :( .

I normally rinse, I also then put them in milk for over an hour, takes away the bitter taste of the liver.

Liver? Very tasty, very healthy. Rapeseed oil? Not so much. It's an omega 6 oil, which is inflammatory (will attribute to heart disease and heart attack unless evened out by an equal amount of omega 3) and when you heat a seedoil it turns carcinerous. I do wish the River Cottage kitchen would return to those age-old healthy fats like butter, lard and tallow instead of giving lipservice to that outdated and unscientific fallacy that saturated fats (which humanity ate to good health for millennia) are unhealthy while man-made seedoils (which can only be industrially extracted and are thus a very new 'food') are somehow touted as 'healthy'.
