Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

I didn't know that adding salt too soon would harden the liver. How important to know that! Thank you. This was very interesting, as the only Italian liver dish I know is with red wine and oregano.

Yes I think it has to do with the salt stiffens the liver so it’s not as melty

Just hearing your voice makes me smile. Your recipe is pretty much the way my Irish/German mother made liver and onions, with the exception of the pepperoncinis. I haven’t made liver and onions for myself for decades now, but you’ve inspired me to make this dish - your way with the perroncinis . Love and appreciation to you Grandma Gina!

I was raised to batter my livers with salt and pepper and garlic powder. We put vegetable oil in the cast iron skillet and dip my seasoned liver in flour and put in the oil to fry lightly. Afterwards, I would pour most of the oil out add about 2 to 4 tB

It so hard 2 fine good liver in Florida. the live they sell here is soft n when u cook it turns into mush. Ty that's the way I always made mine in NY but with a lil white vinegar Ty God Bless

When I was growing up, my mum would just fry the liver.. no onions, or bacon. We'd have it with a squeeze of lemon. All three of us kids loved it! All the other kids I knew HATED liver. I don't know what magic my mum did! Can't wait to make this. Thank you Gina! I just made your incredible focaccia for the 4th time last week!

I'm a native Italian and when I was 5/6 yo I had to eat this disgusting recipe. When I grew up, as an adult, now I'm nearly 50 yo, I don't eat this stuff anymore. I'm lucky.

Mine too. Hate making it because of the flour, now I won't hesitate. We ate it once a month as kids, never had a problem with anemia (low iron). I'm sure the cast iron frying pans didn't hurt either.

I'm really excited to try this! I bought some beef liver from my local farmer this summer, because I read about how high in iron and other vitamins it is, but didn't really know how to best cook it. Use calves liver only. More tender and cooks really fast. You gotta leave a little pink in the liver or else it's overcooked

My late husband made the best fried liver and onions. He'd rince and pat dry the liver too, but he would dip the liver in eggs first,(scrambled with a little milk) then dip in seasoned flour. It gives the liver a crispy coating on the outside when fried! So yummy with carmalized onions, green beans with bacon, mashed potatoes, and pan gravy from the drippings! And don't forget the butter! Truly not "heart" healthy lol❤️

Mio die when she started singing "reginella campagnola" I almost cried... My father used to sing it when I was a kid and you know that familiar feeling of something you kinda forgot but comes up again all of the sudden? Thank you for that!

Gina, when I was a kid in the early 1950s my mother would make kidney stew with beef kidneys. She used celery, potatoes, onions and carrots and let it all simmer in a gravy. Was a tasty meal for seven....would not eat now but it sure tasted good back then.... I doubt if anyone on here ever heard of it ?

Looks Delish ! My mother always dredged the liver thru flour, another good way to do.... .Sometimes fried with Bacon and Onions both .

Same. I always dredge my liver in flower before pan frying it. I like to caramelize the onions, too, but it takes some time.
