For home cooks who are very busy with so many things to do, here's a possible make-ahead strategy. I fry my meatballs a few shades lighter than intended by using a low heat, usually 5 minutes frying time is plenty for the insides to cook well. Then drain, chill and open FREEZE till solid. I pack them in vacuum saver bags and they keep for several months in the freezer (I have a very cold and reliable freezer) until I need them. Either thaw them 24 hours in the fridge, or defrost in MICROWAVE. They can also be kept in the fridge in an airtight container for a few days in the coldest part of the fridge (e.g. meat keeper or chiller compartment). Then best thing is reheating them in the AIR FRYER once defrosted, or from fridge temperature. 180C for around 5 minutes gets them quite crisp and brown, and diners may not realise they didn't just come out of the wok! Use a wire rack as that helps the hot air circulate all round, and no need to turn or toss. I did this for a dinner party I had to throw and my guests did not realise I had not slaved over a hot wok of frying oil to get them ready at the last minute. PS: One can also be creative with the flavourings, I used to help my late mum and she put five-spice powder into the mixture which gave a lovely aromatic taste.
