Totally agree. I've even seen it done carbonara-style, where the egg is poured raw over the rice and allowed to cook directly on it so it coats the grains. I tried it myself after. Flavor was great but I couldn't get the texture right...I'm sure no problem for a pro.

It's probably all right or even undersalted because of how fatty and thick this meat was. This fat also "removed" some salt when it came out.

Video was filmed wonderfully but I've found that teppanyaki is almost always too expensive for the quality, especially the fried rice. Only preparing with salt and soy leaves a lack of complexity that isn't helped by the lack of the heat that only a wok can give.

Shouldn't the rice be added at the same time as the liquid egg mixture? The egg is supposed to completely coat the rice.

Depends on how you do it. I never saw that method (which I call carbonara style) until seeing it on a youtube vide a few years back. Before that fried rice for me always had the eggs cooked first separate and then mixed in so you had nice egg curds in with the rice but not covering it. Both are delicious btw.

The egg in the fried rice looked overcooked and the chef triggered my OCD by never cleaning up the excess salt from seasoning the meat. I don't know if this is the style, but I would have been disappointed by what I saw when comparing to my own teppanyaki experiences.

The cook did a bad job of cooking the egg and incorporating it into the rice. Just big chunks of rubbery overcooked egg mixed in.

@@5taytuned550 I lived in Japan while stationed there in the Marines from 1988-1990 and everything was expensive. It was 141 Yen to the US Dollar then and now like 104. I paid 5 US Dollars for a 6oz Coke in 1988. Even though the experiences were neat you paid dearly for them. In Thailand or the Philippines you could eat just as well if not better for a month on that plus rent a home with a maid easily.

Another fried rice: Dry rice (uncooked): fry it in oil on pan... Then cook it with frying oil+seasoning in less than enough water... Then finish cooking out: fry it on plancha (as shown) with garniture.... 🥨🥨🥨

I love the pan down to the single grain of rice that came loose from the pack. Also the last shot of the bill, almost like you disapprove based on the sloppy work. People should watch part one where you put all the wasabi on a cube of steak, almost like you wanted to piss off the chef.

Yeah good idea. I'm not a chef although I have watched many cooking videos including many tappanyaki, and this must be a junior trainee at a low class restraunt. His handling skills were terrible and the general flow was also pretty bad.
