It's almost 1:00 am, and I'm wanting some fried chicken. LOL!! My momma made the best fried chicken with mashed potatoes, gravy, green beans or baked beans, and homemade biscuits with real butter and jelly. Lord have mercy!! I miss her cooking. Just some things you can't make as good as momma did. 😋

My house seasoning is two parts salt, one part pepper and one pot granulated or garlic powder. It is a great all purpose seasoning that you can have other things to while you're cooking. You could also add ground thyme or poultry seasoning. I have used both and I really like it I've got to decide if I want to put it in my new house seasoning. Sometimes I'll use a tablespoon of my house seasoning and then I'll add a teaspoon of paprika. I'm looking to change it to two parts salt one part pepper one part garlic and one part paprika. So if I make a big batch say it will be one cup salt half cup pepper a half cup garlic and half cup paprika. I also have a rub that I got the recipe from a barbecue place in Memphis Tennessee. They use equal parts salt, sugar, and paprika. That's it and they are one of the most famous barbecue places in the country! :-) I am sure there are more typos in here but it's late at night and I can't use my fingers to type so I will have to leave it the way it is. Any seasoning that has a mild flavor profile such as poultry seasoning or sweet paprika or even a quarter part ground bay leaf. As I said anything with a mild flavor profile would work well. The original was always salt pepper and granulated garlic or garlic powder. Take a little time and play with your seasonings you can have your own house seasoning and you don't have to tell anybody the recipe! Why I whispered that I don't know because nobody's in the room but I did whisper it! :-)

If anybody is not going to do flour egg flour then it would help if the chicken sat on a rack in the fridge for a while so that that coating can stick really well. With this kind of fried chicken I don't have a three-stage breading station so I let it sit in the fridge for a while to firm up. When something breaks like a sauce or soup or gravy it means that it has come apart and you've got solids and you've got liquid and you've got any dairy that was in there in chunks. If you have ever Frozen a milk based soup it would be almost impossible to do that without breaking when it gets thawed. But that's what breaking means it comes apart into its constituent parts. It separates is another term for breaking. :-)

I like to let the chicken marinate overnight in buttermilk and hot sauce. Then beaten egg, then dredge, then fry. Use the leftover buttermilk and the leftover dredge to make your milk gravy. 🙂

Omg ! That looks delicious. I make my gravy like you do. Maybe next time you have to stir as much as gravy needs use a wooden utensil or a rubber spatula. The microphone picks the metal scraping against the pan up and is very loud. Just a suggestion. It's hard to hear what you are saying over the loud metal spoon stirring. Thank you for sharing. My mama always made milk gravy but I prefer what I call poor mans gravy.....I saute' onion before adding the flour dredge and then add water.....it's all in the stir....if you shut off the heat and keep it moving with a fork after you add the liquid you won't have clumps....I have a wooden fork that I use on my non stick pans. I just like gravy a certain way. My mama's was good but I just prefer mine. That sure looks good though Jan....thanks for another good recipe to try. Hugs, Love and Blessings to you and the family.

Looks delicious!! If you let your chicken (pork, steak) sit on a metal cooling rack like you use for cookies/cakes for about 15 minutes after you've dipped it in your flour, the flour will get moist and adhere to your meat so much better while frying. My gravy is always a milk gravy too!!!

Someone gifted you several wooded spoons to use on the cookware. Using metal utensils will tear up cookware. Thats why the pan you were also gifted didnt last
