I can't speak for everyone from the North, but (while I have heard of a Frito pie) I have never eaten one: our equivalent was something called a "Walking Taco". Which is basically the same but instead of chili, it's ground beef with taco seasoning and American taco toppings: and typically they're made in and eaten out of the single-serving bags (and they can also be made with Doritos). God bless with chip-lovin' country.

Cool. Actually both of these remind me of Tostielote from Nuevo Leon, MX. Made typically with Tostitos, but you could subsititute with other chips, then you add pretty much the same things you add to elote inckuding the white corm except maybe some cracker nuts. Though these are more than normally eaten straight out the bag.

Makes me wonder if you could braise some cheap cuts in tomato pepper broth, then shred and keep warm on the griddle/oven. Thicken the broth into a light tomato gravy. Once it's go time crisp up your shredded beef, put the cheese on top, pour on the gravy to melt it all together. Add diced tomatoes if desired. Sort of the insane bastard child of frito pie, birria tacos, disco fries and halal snack packs. Sorry.. I need sleep Maybe medication

Canadian here, we pretty much have the exact same thing, but it's always done with Doritos (Fritos aren't very popular here, at least not in my province). It's usually called Taco in a Bag, or sometimes Taco Salad (but that can also just be used to refer to a Taco Bowl).
