i have worked in this industry and have worked with multiple types of tunnel freezers. the ones i have used run on liquid nitrogen, the tunnel is the width of the belt the product is on. ours was about 4ft wide. the freezer high was only about 3-4ft and on top of leg supports. and the it was about 20-30ft long and took about 2-3 min for product to get from one end of the tunnel to the other. inside the tunnel is about 6-8 spinning shower heads kind of like a dishwasher. they spin inside really fast releasing the nitrogen. there are also about 4 giant fans inside that blow the air around. they also have an intake air flow and exhaust air flow. without a balance air flow the tunnel can have issues.

the other "tunnel freezers" i have used was a like 20 foot by 20 foot square room that had a spiral conveyor stacked on top of itself going up about 15 feet and coming out of the other side in about 35-40 min time. it ran of ammonia so it took longer than the nitrogen flash freezer. inside the ammonia freezer similar to a dish washer had sever spinning heads and sever giant fans. the freezer had a door on the side. couldn't open without stopping the production line. no employee should be in there while its running.
