@@dre27321 I think that in an effort to appear more healthy, many restaurants ommit MSG in powder form, especially the most expensive ones, and substitute it with ingredients that naturally contain MSG for the umami taste. The powder form is completely safe too, before anyone asks, it's just extracted and crystalized from some foods.

I think the store bought has an advantage in this format. One big thing that separates the fancy places is freshness. By the time your staff has it delivered to the studio and it sits around for an hour or so until you film, it's lost a lot of it's freshness.

I’m a sushi chef, and even though sashimi seems like just cuts of fish, that’s a very plain way of looking at it. There’s a lot of skill involved in cutting it the right thickness and in a way that it doesn’t tear. Sushi in general takes lots of skill, been making it since I was a kid luckily :))
