@scubielouie There is actually a difference between extract and essence. Extract is usually an alcohol-based solution while essence is usually a vanilla-flavoured sugar solution

It's possible that either you didn't quite cook the sugar for long enough OR you had some sugar crystals around the top of the pan when you poured it into tray.

Hi! I suggest you to google for "do it yourself vanilla extract". You will find instructions on how to make your own extract, at least the vanilla flavour. You need strong alcohol (like Vodka) and vanilla beans (= dried vanilla "sticks"). You basically just let the vanilla flavour soak into the alcohol for several months. I've made myself some vanilla extract this way. It's ready now, but I haven't tried using it yet. I think it will work, though! Good luck.

No but I tested it for softball stage and it seemed to be about the right texture. I checked it this morning, it is definitely just caramel. I just melted it and made some caramel popcorn lol. I'll definitely try this recipe again though. I want some fudge! lol

Your fudge is mouthwatering! Since I am a sloth, I immediately noticed that the last stage (where you immerse in a tray of water and stir and then spread the mixture out) looks like very hard work. How about just pouring the hot mixture into the greased tin and letting it spread out by itself? Ever tried that? Is stirring while it cools essential to the final texture?

@TitliNihaan Hi Titli!, well you did warn me! I followed your recipe to a T - except that I poured the hot liquid into the pan and left it to set instead of stirring it while it cooled. (Did I mention that I'm a sloth?) The result was absolutely delicious, It was almpst pefectly smooth, but did have a slightly "grainy" texture, as though tiny sugar crystals had formed while it was cooling. I now understand that THAT must be what the stirring is for - to prevent crystals forming. N'est pas?
