What a great video. We have a few Northern Chinese restaurants here in Michigan and when I moved here it was confusing because the food was different but still so amazing. Thick steamed dumplings, cumin fried chicken (which I still do not know how to eat properly), lamb skewers, and scallion pancakes wrapped around veggies and meat. Now I know they all come from Northern China!
As someone from tianjin, putting fermented tofu in jianbing is the regular way to do it. Tianjin represent!!

For the record, northern Chinese food especially Northeast Chinese food IS NOT influenced by S. Korea and/or Japan. Both Korean and Japanese food were originated from ancient China, when they were colonized back then. And they localized it over the years.

It is quite difficult to make authentic Southern Chinese food in the US. A lot of them require fresh ingredients such as seafood fresh from the water, free ranged chicken etc. And as you guys said we the Southern Chinese eat more rice so a lot of Southern food need an Americanized twist to fit the average Americans.

Can you do an episode about gay Asians??? Gay Asians are underrepresented in the mainstream and also in the Asian culture. Asian culture tends to pretend that gay people don't exist in the Asian culture. Homosexuality is a taboo subject that Asian people don't want to talk about. You guys should explore how Asian parents and Asian people react or treat gay Asians. There are a lot of gay Asians out there. You guys should find out where they hang out and interview them and see how their families treat them. This would be an interesting topic to explore.

the question is interesting, and, like many other questions, controversial. My opinion is no, based on the fact that "the most praised "Four Major Cuisines" are Chuan, Lu, Yue and Huaiyang, representing West, North, South and East China cuisine correspondingly.[2] The modern "Eight Cuisines" of China are Anhui (徽菜; Huīcài), Cantonese (粤菜; Yuècài), Fujian (闽菜; Mǐncài), Hunan (湘菜; Xiāngcài), Jiangsu (苏菜; Sūcài), Shandong (鲁菜; Lǔcài), Sichuan (川菜; Chuāncài), and Zhejiang (浙菜; Zhècài) cuisines.[3]" (from Wiki). most of them are southern, only Shandong(鲁菜)is Northern

Northern Chinese food not in my city and I usually eat Cantonese food or more southern style Chinese food everyday so I would go for that type of food if given the choice it fits what I like. America seems to have more variety of Chinese cuisine than here in NZ. I would eat Japanese or Korean food over other Chinese cuisines. But Cambodian dishes is what I also was brought up with so I like eating that as much as Chinese food 🤤😀👍

I am a girl from the north but has lived in the south, I like food from both regions. Northern food is more based on wheat while the Southern on rice. Northern seems more hearty while the Southern more delicate. It's this difference that makes the Chinese food culture rich and fascinating.

I think that Northern Chinese food has more of a diverse influence of flavors and types of food from other cultures such as muslims or mongolians. The more southern chinese food is more of cantonese vibe. There's categories that foods have in southern chinese cooking. Then you got the Hong Kong people with their own style. Then you get the Taiwanese food. I be eating all of it!!!
