No, it is your personal misunderstanding. I thought the same way as you do before. The truth is the taste of the beef fat you will not appreciated, very gamy and unpleasant. Normal "MAN" always have the wrong impression of the lean meat. They always think fat meat is preferable however the result is disappointing and makes the dish taste not as good as expected. Fat is needed for the beef. However, we need pleasant taste of fat instead of the unpleasant one. That is why 2 large spoonful of cooking oil is needed to replace BEEF Fat. Trust me! I tried different %fat version to check the result, I also bought a 20% fat from M&S, the result is so disappointing that the taste you will not appreciate. It is my expertise and professional area to let you know the truth. and..... in every videos when I strongly emphasis some cooking details, I have a strong reason behind to support
