For the record I do not give my dog, neither I recommend people to give them cooked bones! It was a "doggy bag" joke! I know that if a piece of meat is fresh and has dark spots it's because of oxidation, however i've always been told that the oxidation part is bad. I figure this probably stems from spoiled meat because it turns that same color. It looked liked Ms. Gabby had some dark (oxidation) parts on the t-bone and the disk turn out great. However, every time i've cooked steak with oxidation some certain park, like in the video, these pieces in particular seem to be much chewier and taste different compared to the rest of the steak. So i'm if it's like a dish type of deal, for nachos you don't need the best quality beat, but for a steak dinner you'd rather have a fresh & nice cut. Does it just depend on the meat or should you not even use oxidized sections?

This is fun but some inconsistencies. Lime juice won't prevent browning that much. It's about the air contact. Also steaks are all already cut across the grain. That rule applies to skirt, flank, and similar cuts.
