Nice Chef, the specific characteristic Gado-Gado (everything mixed) is Tempe (Tempeh), Tahu (Tofu) & kerupuk (crackers). Many various ingredient of Peanut Souce, depend on where the gado-gado come frome (Betawi, West Java, East Java, Padang etc). U can use coconut milk or not, can add litle bit kencur (aromatic ginger) to make the souce more "fresh teste", some region use litle bit shrimp paste and one thing that make the souce teste originally is use "Palm Suger" and "Indonesian Sweet Soy Souce". That make the teste very otentic. There are kind of cuisine same like gado-gado in Indonesia : Pecel and Karedok. You can see at other U Tube Channel.

I don't know who start it, but I'd found a lot of people said that gado-gado means mix-mix. It's totally wrong. Nobody use word gado as mix. Gado is a word in Javanese language, which where gado-gado originated, which means "eat something without rice (usually for something that is supposed to eat with rice)". Then this word was absorbed as part of Indonesian language with the same meaning. You can open Indonesian dictionary if you don't trust me. I know gado-gado is a very versatile dish and could've a lot of variation, but coconut milk, soy sauce & shrimp paste sounds wrong. This is 3 basic sauce ingredients from my favorite street gado-gadop: Peanut butter ( there is certain way to make it, but it's tiring and time consuming, so generic peanut butter is good enough).p Tamarind water ( mix tamarind with warm water). Palm sugar Additional: fresh chilli rawit / keriting (bird eye). Sambal could be use, many using it, but definitely not the sambal uleg variant. *pro tips: if you don't like spicy, the bitterness of pare (bitter melon) will balancing your gado-gado taste like batman to superman.
