To answer your questions, Melisandre is from Asshai, one of the most magical locations in the verse, and yes there are many more red priests like her who can also work magic, although she is the most powerful one we've seen thus far in the verse.

Davos is called "The Onion Knight" because he snuck food (onions) to Stanis during the siege of Storms End. Davos' efforts basically saved Stanis and all his men from starvation. So Stanis knighted him for it. The lords mock him by calling him "The Knight Knight" because Davos is low born and they dont think he deserves being a knight.

Melisandre kinda told you (and Ser Davos) exactly what she was about to do without outright saying it. "I'm a knight myself of sorts; a champion of light and life." "Shadows cannot live in the dark, Ser Davos. They are servants of light, the children of fire, and the brighter the flame the darker they are." It pays to pay very close attention to some of the more cryptic things characters say in this show. Wether he knew at the time or not, Melisandre actually promised Stannis a son when she seduced him, this is exactly what she meant. She's a Red Priestess, which is one of the highest ranking members of her faith, a very "bright flame".

He’s personable but not enough for the wisdom or strength of a ruling king. He backed out the last second when he was supposed to support Ned and not joining his brother to combine their armies to take back the throne is a little petty. Stannis might not liked by everyone but he made a good offer to Renly which he should have taken.

Renly did “read the room” much better than Ned however. He offered Ned a hundred/hundreds of swords to overtake Cersei’s guards and take control before Robert died. Ned didn’t want to upset the children “in their beds” and his honor wouldn’t allow him to act unfortunately. Renly also knew Stannis would make a terrible King. If it weren’t for Melissandra Renly likely would have defeated Stannis.
