Just a little tip from personal experience, I have baked similar vegan quiche recipes in muffin tins, that way you can make them in advance and have them as a grab and go breakfast! It was perfect for having a real, hearty breakfast in the office! I will be trying this version of the recipe today for sure!

Some suggested variations: kala namak (black salt) in place of liquid aminos, for a more eggy taste; ground carrots instead of sweet potatoes; finely chopped red and purple cabbage in place of kale.

It did get me wondering though... instead of arrowroot powder I'd be interested to see if chickpea flour would work to firm up a recipe like this (also your pumpkin pie!). I may try it with that, just because that's a whole food. Really great to wake up to this though, thank you!

Try garbanzo beans flour. Mix equal one part water to one and one half parts chickpea flour.

Hi 😊 Looks lovely- in keeping with Whole & Healthy - how about considering not using boxed mushrooms? Unless the box is cardboard? How about reusing your own bag and getting loose mushrooms, etc? Part of the whole food and healthy people and healthy living movement is reducing plastic use. Yes it's been harder during a pandemic year when many stores offer prepackaged things but it's worth identifying sources which do not rely on hideous plastic goods that just trash up the world for everybody!

@@muffin1224 it's actually really easy to make seitan, my husband does it often. It's a lot like making bread, if you like to knead then this is for you! We found the best tasting and most satisfying texture results are mixing white flour with some whole wheat flour. Haven't scientifically figured out the proportions as it were but about three white to one whole wheat. We just learned how from KZbin tutorials.
