@@gotaplaythat’s a very thin steak. Maybe 45 seconds is still lightly low to get to medium rare, but not by much for a steak so thin

Why not use the tallow to cook the rice too? Cooking oil in TH is typically palm oil or soya bean oil, right? Not good stuff.

I don’t use cooking oil for my garlic and butter fried rice. The dish is meant to have a rich, garlicky, and buttery flavor, which comes from frying the rice in a wok with butter and garlic. Adding beef tallow, which has a strong, distinct smell, would overpower these flavors and change the intended taste."

@@ItsMeSai in the video you used cooking oil to fry the garlic, then added butter to fry the rice (nice!) and tallow to fry the steak. I’ve never used tallow, (I asked in Makro - no have 🥲) so I’m using pork fat (lard) to fry (I’m not buying seed oils anymore).

@@mac.rodose I don’t use vegetable oil or palm oil to fry the garlic; I actually use coconut oil. Coconut oil is a healthier option because it contains medium-chain fatty acids that are more easily metabolized by the body, providing a quick energy source. It also has a mild flavor that complements garlic and butter without overpowering them. Compared to palm oil or beef tallow (which can have a stronger taste and higher saturated fat), coconut oil keeps the dish lighter and allows the garlic and butter to really shine through.

@@ItsMeSai nice! Yes coconut oil, readily available and not too expensive in Thailand! Thanks for reminding me, although it has its own distinctive taste of course. Pretty sure you never mentioned it was coconut oil in the video, so thanks for clearing that up! Where do you get tallow in Thailand? Do you have a GO Wholesale near you? They’ve got those honeycomb stainless steel/teflon frying pans for 300b! (Similar to Hexclad pans which are hundreds of dollars!)
