I've read after seasoning pots, lining them with foil and then parchment paper, then placing dough or cake mix in pot helps protect bread or cake.

Hey! Putting flour on your hands to clear the yeast is a brilliant technique!!! Does this work for all doughs? I always seem to have trouble kneading a dough when my hand is stuck with so many dough scraps . . . It is quite the inhibition, ya know?

You can use the Dutch oven just like any other bread mold. Just grease lightly and allow the dough to prove in it before baking :-)

***** Some of the American community like to call cast iron casserole pots dutch ovens even though they are clearly not, a dutch oven is a big cast iron thing that you can only really use with an open fire, the lid is shaped to accommodate hot coals from the fire so it cooks from top and bottom.

tigerwa I have an actual dutch oven with a rimmed lid to hold hot coals and I use it very successfully in my modern gas oven and on top of the range. It doesn't matter what the heat source is, a properly cleaned, seasoned and maintained iron "dutchie" is a thing of beauty.

Nice presentation? An alternative to other baking vessels you can't get as cheap and easy? A tribute to time gone by when cooking and baking in clay pots were what people did, because they were the only vessels at hand? Want some more reasons? I can make them up as I go along. Clay pots are timeless vessel to cook and bake in. Although for cooking you might want to use one without a hole in the bottom. ;)

EC912 It doesn't really affect the texture, since there is a seal of three layers of oil. It prevents sticking (provided a fresh layer of greasing before baking). But it also keeps most moisture contained since the baked in oil acts like a mild glaze, that gets strengthened the more you use the same pot. You can come to a level after many uses, where you almost or maybe even never have to grease it anymore, provided you never again use any soap for cleaning. Moist salt for rubbing down remains stuck on the surface and hot water to clean and sterilize. No dish water of course, it would destroy the patina.

I am laughing a bit, as this really is a miniature tandoor oven when you think about it and cooking in such has been done for centuries. To worry over chemicals from a clay pot is sort of nonsensical in this regard. I enjoyed watching and especially loved the seasoning of the pots information. Not all that different for iron skillets and dutch ovens when you think about it. My only tip or contributing advise is to carefully check out any new clay pots for cracks before purchasing them for this cooking technique. I enjoyed the video, but I am wondering if this is essentially a pull-apart bread or not? It would be a real fun thing to do in teaching any kid how to make bread and enjoy the experience. Thanks.
