Hey Tim! Sorry for a delayed response and I hope you get this before you make it. If you can’t get sage it can be left out with no major impact to the dish and extra garlic can easily be added. If you wanted to add sage paste, you can do but only add in a really small amount as it will be a lot stronger. Hope you and your partner enjoy it 😊😊

Great recipe!!! I'd add an extra warning for the wine or any other use of alcohol for "flambé": make sure to always turn your cooker hood off to do that or you'll burn the kitchen ;)

In terms of suggestions for new recipes, if you're in Sydney, there is an amazing ramen restaurant called Rara (in Redfern and Randwick). Their ramen tastes so much better than anywhere else I've been and it would be great if you could figure out how they make it and make a recipe showing how to cook it.

Glad you think so! I'm in Adelaide but when we're able to travel again I'm going to do a business trip around Aus and try as many different restaurants as I can so ill definitely add this to it. @@ChefJackOvens In Adelaide, I was impressed with Urumqi Uyghur Cuisine and Steven ter Horst. In terms of ramen, I've eaten ramen throughout Australia and Japan and the ramen in Rara is in a different league altogether. There's always a massive line of people waiting to get into the one in Redfern.

Sorry for the late response. I do have a couple of amazing short rib recipes. I've been thinking about cooking short ribs for a while now, I will definitely do this. I looked into that, I don't think they will fit as it has really skinny legs. I will have to get a new bench I think. Its supposed to be thickened cream. Regular cream doesn't reduce as well

Thanks for sharing! I really want to try this out but I'm worried about that clarified butter and full fat cream. I've never had full fat cream before (lactose intolerant) and never even heard of clarified butter until now. Do you have substitutes in mind or will I have to restock on Lactaid, because I'm definitely wanting this.

You can omit the Clarified butter and replace it with Olive Oil. You can also substitute the cream for coconut milk. You will have to reduce the coconut milk down a few more minutes than the cream I used to achieve a good consistency. 😊

You should season as you cook. That means the prawns need to be seasoned before they're cooked as well. And I'm not sure but maybe a reduction from the shells will add more umami flavor to the sauce.

Thanks for your video. I like your sauces but I wonder why you do not cook the pasta with the sauce you make to even give more flavor to it. I know every person has their own style but in my humble opinion the pasta would taste even better when mixed with the sauce in the pan just a few minutes before serving, so that it can absorb all the flavors rather than looking dry and flavorless. Nevertheless, great video and recipe!
